10-Minute Ice Cream Pie

I actually made and photographed this ice cream pie at the beginning of the summer, but kept forgetting to post it!  Oops!!!  So alas, as we enjoy our final days of this beautiful season, I offer you another summer favorite — ice cream pie!  :)

The fabulousness of this recipe is that it requires no ice cream maker (unless you really want to earn an extra gold star and go “homemade”), only takes 10 minutes to create, and is a guaranteed crowd-pleaser.  I’m not kidding.  Every time I make one of these (which is often when I run out of time to cook something else!), people go nuts over them.  And they disappear in a snap.  :)

So if you love ice cream, or would love a fun dessert project for the kids, or are looking for an emergency quick dessert recipe, or….are simply craving an ice cream pie….you should totally give this a try!  I’ve included the method (can hardly call this a “recipe”) below, with lots of ideas for variations.  Enjoy!!

10-Minute ice Cream Pie

Looking for a fun dessert project for the kids? You will love this 10-Minute Ice Cream Pie recipe!

Ingredients:

  • half gallon (2 quarts) favorite ice cream or sorbet
  • 1 (9 inch) pre-made cookie or graham cracker crust
  • Favorite toppings (chocolate chips, chocolate syrup (or Magic Shell), sprinkles, chopped fruit, candy bars, etc.)

Directions:

Let ice cream thaw until slightly soft and scoop-able. Then gently spread a layer in the pie crust, approximately 1" thick. Add in a light layer of toppings on top. Then add one more 1" thick layer of ice cream, and add more toppings on top.  Freeze the pie until it is firm again, then slice and serve.  (Top with whipped cream if you'd like.)

Ingredient Combination Ideas:

Mint Chocolate Chip:
Mint chocolate-chip ice cream, Oreo crust, chocolate chips, chocolate syrup, chocolate bar shavings

Mocha:
Coffee ice cream, Oreo crust, chocolate syrup, chocolate-covered espresso beans

Strawberry Banana:
Strawberry (or any fruit) ice cream, graham-cracker crust, chopped strawberries and bananas (or other fresh fruits)

Toffee Caramel:
Toffee ice cream, graham-cracker crust, crushed Heath Bar bits, caramel topping, chocolate syrup

Caramel Peach:
Peach or vanilla ice cream, graham-cracker crust, caramel sauce, diced peaches (all the better if caramelized!)

    Now I know what I’ll be making for my boyfriend’s next birthday! He loves ice cream cake but we don’t live near a DQ, plus I bet this would be so much better!

    I made one of these last night for guests and everyone loved it! I used vanilla wafers for crust – didn’t crush – just lined them up in pie pan. Covered with layer of cappuccino chocolate ice cream, topped with layer of toffee bark ice cream. Served with hot caramel sauce – yum!

    looks delicious! i made a similar ice cream pie with my sister and her friends, but in stead of a purchased pre-made crust, we made a thick layer of a rice-krispy-treat-like concoction. it was amazing! http://beeeats.blogspot.com/2010/09/midnight-snack.html

      Oh my HEAVENS, Bea — this recipe is calling my name now. I’m kinnnnnd of obsessed with rice krispy treats. But never thought of pairing them with ice cream!! Holy cow – this is going on the to-do list before winter hits. :)
