  • Total Time: 30 minutes
  • Yield: 4-6 servings 1x

Description

This simple soup is full of great flavor with a kick!

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small white onion, chopped
  • 2 jalapenos, seeded and chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (28 oz.) can crushed tomatoes
  • 1 cup canned or frozen whole-kernel corn
  • 3 chipotles in adobo sauce, roughly chopped
  • 1 Tbsp. adobo sauce
  • 2 cups shredded cooked chicken (I used rotisserie chicken)
  • 1 cup cooked white rice
  • 2/3 cup salsa verde, homemade or store-bought (recommend Herdez brand)
  • juice of half a lime
  • salt and pepper
  • garnish: diced avocado, fresh cilantro, tortilla chips, crumbled queso fresco, additional lime wedges

Instructions

  1. Heat oil in a large stockpot over medium-high heat. Add onion and jalapenos and saute for 5 minutes until the onion is translucent and tender. Add garlic and saute for an additional minute until fragrant.
  2. Add chicken broth, tomatoes, corn, chipotles, adobo sauce, and stir to combine. Heat until nearly boiling, then reduce heat to medium-low and let simmer for at least 10 minutes. Stir in the chicken, rice, salsa verde and lime juice, and then season with salt and pepper.
  3. Serve warm garnished with lots of fresh avocado, cilantro, tortilla chips and queso fresco.
  4. (*See note below for options with more or less heat/spiciness.*)

  1. We’re heading into another stretch of cold weather later this week so I’m bringing the comfort food back out. This soup looks like the perfect option! I’ll have to stick with the less spicy version, I’m a total wimp in that regard :)

  2. Yum!

We have great neighbors here. I was worried about moving to Kansas because in California, we lived in the country and had all the space to ourselves. We were worried that moving into a subdivision would be hard. But, we bought a house in the middle of a hill on a cul-de-sac with one other neighbor. And would you believe it?: They’re our age and go to our Church! How lucky did we get?! yay for great neighbors!

  3. This sounds perfect for the rainy day we’re having today! And I’m truly jealous of your loft living. I always wanted a loft… college dream lol ;)

  4. This looks like a big bowl of flavour! How awesome to have neighbours like Amanda who can greet you with something so delicious at the end of the day. I might move in too ;)

  5. I could eat this every single day!!!! You are so lucky to have such good neighbors!!!

  6. Ali, I am going crazy over this soup. Chipotle (the pepper) and house are maybe the two must used ingredients in my kitchen!! I love everything about this soup and will be making it soon. ESPECIALLY, since it is freezing and snow here!

  16. So this is probably a totally obvious question, but: there’s no actual chicken in the recipe, just the broth? Or was that an accidental omission? Just thought from the title that there’d be chicken, so wanted to double check before I make it. Sounds delicious either way!

  17. I have an obsession with chipotle. And this is right up my alley for comfort food, looks delish!
