Wow – what an AMAZING summer! For those of you who are just tuning in, Cassie and I have spent the last eight weeks with you celebrating tomato recipes in partnership with the International Justice Mission’s Recipe for Change campaign. It has been everything I love — foodie love meeting with social justice. What could be better?
I considered making a “fancier” recipe for this week of the Tomato Love Recipe Exchange. But alas, favorites are favorites.
So allow me to introduce to you what this food blogger absolutely loves to make once or twice a month — easy chicken cacciatore. I credit this recipe completely to my friend, Sarah, who is a whiz at improvising creative new recipes on the fly. Years ago when I was coming over for dinner one night, I walked in to the most delicious smell coming from the kitchen. When I asked what she had made, she of course had “thrown” together some random ingredients she had on hand (rotisserie chicken, a jar of roasted red peppers, onion, jalapeno and chicken stock), let them bake together for an hour or so, and then served the delicious mixture over egg noodles.
It is week six of the Tomato Love Recipe Exchange, and I admit it was probably one of the topics I was most looking forward to — pizza pizza!
And our giveaway is out of this world for you pizza lovers — a 7-piece Pro Premium Pizza Making Kit from Pizza Home Chef! You must read below for more info about how to enter this one. This pizza kit is stunning!!!
My how time flies! It is now Week 5 of the Tomato Love Recipe Exchange, and Cassie and I are super excited this week to be celebrating tomato PASTAS with you all. And we are extra excited that our sponsor for the week is one of our favorite pasta makers — Pappardelle’s! Be sure to read below to enter our giveaway for a chance to win a giftcard to enjoy some of their amazing pastas.
I have also been so excited to see so many of our readers and fellow bloggers rally around the Recipe for Change project this summer to help support our country’s tomato farmers. If you haven’t already, would so love to have each of you take a minute (or really, less than a minute!) to encourage your local grocery stores to sign the Fair Food Pledge. Tons of grocery stores (i.e. Trader Joe’s, Whole Foods and more) have already committed to paying fair wages, but we will need help encouraging everyone else to sign on. So if you have a free minute, click here for an easy link to cheer on some of your local grocery stores, and together we really can make a difference in supporting our tomato farmers!
For the 4th week of our Tomato Love Recipe Exchange, we are giving away a gorgeous red “Simmer, Steam & Fry Set” from Le Creuset. (See details below!) To celebrate, Cassie has posted an amazing heirloom tomato gazpacho. And I am excited to introduce you to one of my new favorites — Roasted Tomato Bacon Soup.
This recipe is everything you love about tomato soup…and more. It overflows with beautiful fresh tomatoes, roasted to sweet perfection. Then some smoked paprika kicks it up a notch. But of course, the bacon pretty much steals the show here. It is subtle, but just rounds everything out with that smoky, savory kick that’s pretty much impossible not to love. Overall, a very simple list of ingredients. But I loved how you could totally savor each one. My idea of a fabulous simple soup!
This is definitely the summer of tomatoes!!! Cassie and I have had a blast sharing in the #TomatoLove with you all this summer, and seeing the photos and reading about all of your delicious recipes during our appetizer and salsas/dips weeks during the Tomato Love Recipe Exchange. You all really love your tomatoes! :)
We are very excited to be moving into Week 3 of the recipe exchange this week – SALADS! And to celebrate, we are giving away a gorgeous salad bowl set from Big Kitchen. You’ll have to scroll down and read more to learn how to enter for a chance to win this beauty!!
