To make this lightened-up Greek yogurt Caesar dressing, gather your ingredients together first. (And if you can’t find anchovy paste, feel free to use whole anchovies and puree the dressing in the blender. And no, you can’t skip the anchovies!)

Whisk them all together in a bowl, or like I said, puree them in a blender. And then in minutes, your dressing is ready to go.

Instead of relying on fats for all of the flavor, this Caesar dressing relies instead on all of the delicious (and lighter) other flavor boosters. And then the Greek yogurt swoops in to tie them all together with a delicious, rich and creamy finish. No eggs or unnecessary oils allowed. :)

Greek Yogurt Caesar Dressing

Description

This Greek Yogurt Caesar Dressing recipe is a deliciously lightened-up take on the classic. You’ll love it!


Ingredients

Scale
  • 1/2 cup plain Greek yogurt (I used non-fat)
  • 1/2 cup freshly-grated Parmesan cheese
  • 34 tablespoons milk
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons anchovy paste
  • 2 teaspoons worcestershire sauce
  • 1 clove garlic, pressed or minced
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon sea salt
  • pinch of black pepper
  • 24 tablespoons fresh lemon juice

Instructions

  1. Whisk all ingredients together until combined and smooth, whisking in the lemon juice a tablespoon a time at the end until the balance tastes right to you.  Season with additional salt and pepper if needed, and add extra milk if needed to thin out the dressing to your desired consistency.
  2. Serve immediately on a Caesar salad, or refrigerate in a sealed container for up to 3 days.
