Easy Mini Pecan Tarts

Anyone planning to make pecan pies this Thanksgiving? Well if you’re looking to save a bit of time, and still make a total crowd-pleasing dessert, allow me to recommend these adorable little Easy Mini Pecan Tarts!

They are everything you love about pecan pie, but when made “bite-sized” with my favorite little phyllo cups, they can literally be made from start to finish in 20 minutes. Boom. Spiced Cocoa Roasted Almonds

Brief disclaimer: These nuts are 100% irresistible.

Oh my word. I made them for the first time with my parents on Thanksgiving, thinking they might be a nice snack to keep out for the holiday weekend. But….I’m pretty sure they disappeared by the end of the day. Even with everyone’s stomachs full from our Thanksgiving meal — they were still irresistible!!

Thai Basil Chicken (Gai Pad Krapow)

Every week that I’ve been at the market this summer and passed by the bunches of fresh, vivid, and wonderfully fragrant Thai basil…I crave this dish. YUM!

Basil chicken has long been a favorite of mine. (Which I must say is a little odd for me, since I’m not usually drawn to plain meat dishes.) But there’s something about the simplicity of the dish, highlighting its namesake ingredients, that I absolutely love. So flavorful, and so delicious!

Chipotle Lime Shrimp

There are some flavors that are just meant to be together. Peanut butter and jelly…. Strawberries and cream…. Salt and pepper… And one of MY favorites…chipotle and lime. Yum!

The wonderfully smoky, sweet and slightly spicy chipotle mixes perfectly with the tangy, sweet lime to make a delicious seasoning perfect for just about any meat, fish, seafood, salad dressing, vegetables, sauce…you name it!

Easy Sticky Buns

To kick of a morning of meetings on Mardi Gras, I decided to bake up these delicious sticky buns for my coworkers! YUM!

I have actually had a lovely surplus of puff pastry sitting in my freezer this month, after stocking up from a $0.99 sale at Aldi (wahoo!). So was excited to put a box to use — especially on a Barefoot Contessa recipe! I’m telling you — the woman is brilliant. Still have yet to find a recipe of hers that I don’t immediately fall in love with.

Chicken Lettuce Wraps

Somehow PF Changs came up in conversation yesterday when I was talking on the phone with my Mom. And ever since, you can guess what two words have been on my mind….lettuce wraps. :-) YUM. Ironically, I happen to live right by a PF Changs, but have probably eaten there more in other cities than here at home. Go figure… But whenever I do, their classic lettuce wraps are always at the top of my list.

I’ve experimented with a few recipes of my own over the years — some great, some not-so-much — but have settled upon this one as a favorite (with a few modifications!). Great flavor, fresh and healthy ingredients, and best of all…the recipe makes a delicious “pouring” sauce to finish them off! As noted in the recipe, you can experiment with adding the Chinese mustard and/or Sriracha to kick up the heat. Or, feel free to keep it “mild and mellow” as well. :)
