Minestrone Soup

When I was a kid, our extended family used to love meeting up for big dinners regularly at our neighborhood Italian restaurant, DeFazio’s. Everyone would order these huge steaming plates of delicious pastas, salads, sides and more. And Yours Truly would order…”plain spaghetti”. Oh yes. I was the token picky eater in the family. And no thank you, I didĀ not want to “just try it”. ;)

Luckily, though, everyone at DeFazio’s always received a steaming bowl of minestrone soup as an appetizer. And over the years, I began to grow more and more fond of this yummy pasta soup, even though I would have had a small heart attack at age 10 if anyone had told me that there was zucchini snuck in there!

Lobster Bisque

Today I made one of my favorites for a special treat — classic lobster bisque.

I have a long list of restaurants I whose lobster bisques I adore, but for some reason I had never before tried making it at home. (Somehow lobster tails don’t seem to make it into my budget too often!) But my recent discovery of a bag of frozen chopped lobster meat from Trader Joe’s inspired me to give it a try. And I’m pretty sure now that this soup may make it into “the rotation” (as my friend Christin calls it) of favorites from now on.

Basil, Chicken & Orzo Soup

Any of my friends, family, or coworkers will tell you that I’m kind of a ridiculous fan of soup. Love it. Love ordering it at restaurants. Love making it at home. Love cozying up with a warm bowl in the cold of winter. And alas…even on brutally hot summer days like we’ve had this past week (when the rest of the world is dining on popsicles), I can be found in the kitchen….making soup. :)

Spring Vegetable Minestrone

Ok, I wasn’t really planning to post this one. But it turned out so amazingly delicious I decided to at least snap a final photo and pop it on here! :)

Don’t be at all scared by the long list of ingredients. This soup — like all minestrone soups — is so much more about the method than the specifics. So feel free to just toss in whatever vegetables you have on hand. Since it’s Spring, I happened to have some fresh spinach, asparagus, and snow peas in the fridge waiting to be used. (Along with the carrots, celery and onion that I recommend always having on hand!) But really, you can toss in whatever veggies you like!

White Bean & Ham Soup

After a few glorious weeks of sunny and surprisingly warm fall weather, the temperature in Kansas City finally dropped today, making it feel much more like the chilly November we know! While I seem to be becoming less and less a fan of cold weather (am anti-being-cold!), I absolutely love all of the little traditions that come with cozy-ing up for winter. Today, for example, pulled out some of my favorite warm blankets (and then snuggled up with them to read), lit a favorite caramel-vanilla candle, made some hot cider, bought some candy canes (for soon-to-be-posted peppermint mochas!), and pulled out some favorite sweaters for me and my puppy, Henry, to wear (see the cuteness below). :)

And of course….had to make some warm soup. So for day six of Cheap Eats week, we get to celebrate one of my favorites — white bean and ham soup. Absolutely delicious, simple, and very affordable. And I’m happy to say the star of the soup is my all-time favorite broth ever — ham broth!!! YUM. If you’ve never made it before, run to the store and buy yourself a ham shank (or hock) and give it a try. I promise you won’t regret it. :) Seriously the most flavorful, delicious broth ever!!
