In honor of the Smoothie Maker Gift Set Giveaway that we have going on this week, and because I just returned home from a carb-loading trip in Europe and am craving some lighter meals, I thought it would be fun to do a smoothie recipe roundup!
I was craving some thick Mexican hot chocolate, but it was cold and late and I had about zero interest in bundling up to go to the grocery store to pick up some authentic Mexican chocolate. So instead, I did the next best thing — rounded up some cinnamon, chipotle powder, cayenne and a pinch of nutmeg, and added the spices to a simple homemade hot chocolate recipe.
A few weeks ago, I was adding in the thyme and oregano to my favorite homemade mozzarella sticks when it suddenly occurred to me — why are cheese sticks always made with Italian seasonings? Mexican food includes mozzarella all the time. Why not give this cheese stick recipe a try…Mexi-style?!?
My crazy-busy season of the year has officially hit. From conferences and launching new programs at work, to teaching my first-ever cooking class last night at church (SO fun!), to taking my choir on the road to sing in a national gospel choir competition in St. Louis (believe it!), to our fitness challenge at work, to weddings and concerts and times out with friends galore…somehow I haven’t had a night at home to myself now in weeks. Nor, apparently, has there been much time to blog. Or cook. Eeks. (I’m working to remedy this!)
But as you’ve read on here before, one of my favorite defaults when pressed for time is to bring home the most deliciously-smelling item at the grocery store — a rotisserie chicken. I’m telling you — they are little miracles. So delicious, easy, and versatile. I usually just cook for one or two, so I generally can stretch mine into at least three recipes. Love it!
For Valentine’s Day this year, thought I’d post a classic favorite from my kitchen — these adorable little chocolate molten lava cakes! Little did I know when I first tried them years ago (at Chili’s…yes….) that they are so simple to whip up. Just 7 minutes of prep, and 7 minutes in the oven, and voila…a classy and delicious dessert ready to go!!
I think I may be one of the only people in the world who’s not a Chipotle fan. I know…judge away.
But. I absolutely love shredded beef tacos. They’re my absolute favorite thing to order at two of my favorite Mexican restaurants in town. So when I saw one of my favorite bloggers post a delicious photo and recipe of her shredded beef tacos a few months ago, I knew I had to give them a try!
