Roasted Red Pepper & Feta Hummus

For Day 3 of “Hip Hip for Hummus Week”, I excited to present one of my all-time favorites — roasted red pepper and feta hummus!

I’ve loved red pepper hummus for years, but it wasn’t until recently that I randomly tossed a little feta into the mix and fell in love with the combination. And then when accented by some smoked or sweet paprika, it’s absolutely irresistible!!! And, by contrast to yesterday’s post, I must say it’s a lovely color as well. :)

For Day 2 of “Hip Hip for Hummus Week”, thought we’d branch out past the traditional chickpea to its cousin — the black bean!

I’m happy to say that in a taste-test this past weekend of some experimental hummus recipes, my next-door neighbor, friend, and fellow foodie, Kathleen, voted this one her favorite. (Which, as a total sidenote, I should mention that she is a vegan. And we had the fun realization that nearly all of the hummus recipes this week are vegan-friendly – yay!)

Corn & Black Bean Quinoa Salad

Whew! After a Super Bowl Sunday full of great friends, great laughs, and um…all of my favorite not-so-healthy processed dips and chips…thought it would be good to begin the week on a healthier note!

So gathered all of these yummy, colorful veggies to create this delicious quinoa salad. I saw a photo of the recipe on a blog months ago and could not get over how gorgeous it was! Love the colors, love the fresh, light ingredients, and love how simple it is to make!! The chipotle-lime dressing was an especially delightful finish.
