Guesswhatguesswhat? Today we are revisiting my favorite recipe for my favorite soup of all time — egg drop soup!
Yes, we are “revisiting” the recipe because I decided it was time to give it a little photo makeover. As often tends to be the case with food bloggers, I posted some of my longtime favorite recipes in the first year that I started blogging. And while the food was delicious, the photos were often a little less than “appetizing”. And the dark and orange-looking egg drop soup photo happened to fall into that category. I was reminded of this when I made a batch of egg drop soup this weekend and popped it on Instagram, and then had to look up the recipe when people started asking for the link (and kind of didn’t want to send it out). So I took it as an excuse to make a second batch of egg drop soup to enjoy in one weekend and do a quick photo shoot with the second batch. We call that win-win, folks.
Oh my goodness. I think the reality of planning 2 back-to-back trips before leaving the country for 3+ weeks is finally settling in.
It is only the beginning of the week, and I have already pulled two ridiculously late nighters and have been buzzing around a million miles an hour during the days trying to check things off my to-do lists. No complaints — it has already been a wonderful autumn and I’m completely excited about what’s ahead these next two months. But I’ve come to accept that spare time and sleep are definitely going to be a little limited right now, so I’m trying to soak of moments of joy and relaxation whenever they can be found!
A few weeks ago on a rainy evening, I randomly bumped into an old roommate at Target. And, yes, pretty sure we were thosepeople who stood there right in the middle of the hustle and bustle of carts catching up on our life stories for an hour. It was so great to see her! But sure enough, when there was still more to share and the store was nearing closing time, the conversation came to — “We should do dinner!”
So this week we did! I invited some of the old crew to also come along, and we all spent an evening together at my place sharing a wonderful meal together, some of our favorite nostalgic wines from back in the day, and hours upon hours of conversation about the joys and answered prayers from the past year, some tearful honest moments about the lows, hilarious dating stories for better and worse, cheers over a new engagement, and endless hilarity and laughs. I love these friends!
Oh my word, after what seemed like the longest, grayest, snowy-est winter in history, spring has finally arrived! Oddly in Kansas City, we had 9″ of snow decide to fall on the official first day of the new season. (I know…ser-i-ous-ly.) But as of today, all of the white has melted away, and we were able to see the beautiful green crocuses and buds beginning to show, that promise such beauty to come. I love it!!!
Whew! After a Super Bowl Sunday full of great friends, great laughs, and um…all of my favorite not-so-healthy processed dips and chips…thought it would be good to begin the week on a healthier note!
So gathered all of these yummy, colorful veggies to create this delicious quinoa salad. I saw a photo of the recipe on a blog months ago and could not get over how gorgeous it was! Love the colors, love the fresh, light ingredients, and love how simple it is to make!! The chipotle-lime dressing was an especially delightful finish.
So can you tell I’ve had fresh pineapple in the house this week?? :) Couldn’t resist…for $1.99, had to buy at least two!!
After using them to make this fabulous dessert and a smoothie, decided to combine them with two of my other absolute favorite produce section finds to make this salsa! Yep – avocados and mangoes were BOTH fresh, ripe, and on sale this week. Love it!
