Oh my goodness. I think the reality of planning 2 back-to-back trips before leaving the country for 3+ weeks is finally settling in.
It is only the beginning of the week, and I have already pulled two ridiculously late nighters and have been buzzing around a million miles an hour during the days trying to check things off my to-do lists. No complaints — it has already been a wonderful autumn and I’m completely excited about what’s ahead these next two months. But I’ve come to accept that spare time and sleep are definitely going to be a little limited right now, so I’m trying to soak of moments of joy and relaxation whenever they can be found!
After so many of you readers ate up (ha – literally!) the recipes for classic No Bake Energy Bites and Pumpkin No Bake Energy Bites, I thought it would be fun to make a red and green “holiday” edition of the favorite with these Cranberry Pistachio Energy Bites!
Of all the recipe posts on Gimme Some Oven, my #1 most viewed post ever (thanks to you all and Pinterest) continues to be these No-Bake Energy Bites. And for good reason! These little guys continue to be one of my personal favorites, as well as one of the most requested snacks by my friends and family. And I love recipes like this that can double as breakfasts, snacks or even a quick dessert!
So for a fun twist this autumn, thought that it would be fun to celebrate the season and make some Pumpkin No Bake Energy Bites! I was so excited to try these, and after throwing in a little of this and a little of that, was thrilled with the results. These little bites remind me a lot of my favorite fruit and nut bars. But the best part is that they are super easy to make homemade, packed with protein and ingredients you can feel good about, they are vegetarian and vegan (if you swap some agave for honey), and of course…they are delicious!
For any of you who missed last week’s post, I tried making homemade apple cider (really homemade — starting with apples galore!) for the first time this fall. And cannot tell you how much we’ve been enjoying it!!
I don’t know about you, but often it seems that however I begin the day — with a healthy or not-so-healthy breakfast — can usually set the tone for how I continue eating the rest of the day. But since I’m not one to rise and shine any earlier than need be, and often end up having my hot tea and breakfast during my 25-minute commute to work, anything healthy in the “grab and go” category is always much appreciated!
It seems like everywhere you can go for breakfast nowadays — from Starbucks, to McD’s, to my favorite local breakfast spot — breakfast parfaits are tres chic. And rightfully so! That burst of fresh fruit, crunchy granola, and healthy yogurt are a perfect way to begin the day! :)
They also happen to be a completely easy, affordable and super-speedy breakfast to enjoy at home as well! I’ve been making them lately with the delicious fresh blackberries and strawberries that have been in abundance at the market. Most often I love using granola in these, but this week I’ve actually been digging Kashi’s “Go Lean Crunch” — hey, whatever works!
I can’t believe I haven’t posted on this yet! I literally make this drink all the time.
Allow me to introduce you to MY version of the famous “orange julius”. But rather than being made with canned concentrate, and a few other questionable ingredients, this orange smoothie is made with fabulously fresh ingredients that you can feel good about enjoying. And all you literally do is drop everything in a blender, and push the button. Oh-so-easy!
