After so many of you readers ate up (ha – literally!) the recipes for classic No Bake Energy Bites and Pumpkin No Bake Energy Bites, I thought it would be fun to make a red and green “holiday” edition of the favorite with these Cranberry Pistachio Energy Bites!
‘Tis the season for cool mornings, warm coffee, and one of my other winter favorites — Cranberry Bliss season at Starbucks!
If any of you have ever tried their heavenly cranberry bliss bars laced with white chocolate and cranberries, you know the reason why these treats fly off the pastry shelves each day. So for my fall baking season this year, I decided to experiment and try translating this favorite into a cookie. Hence the name, “Cranberry Bliss Cookies”!
When I was in college, I used to be able to drink coffee at all hours of the day. 7am, 2pm, 2am…my friends and I pretty much lived at the coffee shop near campus, and the caffeine never fazed me. (And I admit I was a little skeptical of my friends who “swore” coffee would keep them up if they drank it too late in the day!)
But apparently what goes around comes around. A few years ago, literally overnight it seemed like my body decided to make the switch. And I now fall into the Don’t-Let-Any-Caffeine-Near-Me-After-3pm category. (Which even includes decaf, which I swear will keep me up half of the night too!) I know. Call it adulthood, but I’m now “that” person. :)
My cabinets may or may not have an unusually plentiful supply of pumpkin this year…
Ha – I can’t seem to help myself! Ever since last year’s pumpkin shortage, an extra can always seems to make its way into my grocery bag whenever I pass by it in the store. Apparently my subconscious is worried I might have to go another (gasp!) two months without pumpkin this winter. Oh well, I guess my hoarding habits could be worse… :-)
Yes, it’s quite the tragedy. I was super-excited. Had my little Brownie outfit. Went to the first two meetings. Picked up my cheese and sausage order forms and skipped around the neighborhood using my best sales and persuasion strategies (grew up with a dad in marketing) to sell as much merch as possible. But then…a sad day arrived. :( For reasons still unknown to me, our troop leaders spontaneously backed out and apparently couldn’t find replacements. So this poor little Brownie was left to make another loop around the neighborhood, apologizing and informing everyone that the delicious cheese and sausage would no longer be arriving.
So…pretty sure I’ve been baking up a storm this week. From cookies, to candies, to cakes, to cupcakes (which actually failed miserably in the “looks” department, so were turned into a trifle!) — you name it. Most was in preparation for my annual Christmas party last night (30+ people crammed into my tiny bungalow), and the rest for Christmas gifts galore. I love this season!!
Anyway, of all the little bite-sized desserts I’ve made over the years, these classic little oreo truffles (a.k.a. “snowballs” or “dirty snowballs”) still always prove to be a crowd favorite. And one of my favorites as well. :) What’s not to love about Oreos, cream cheese, and chocolate??
I’m quite proud of myself. :) Usually whenever I bring home a batch of fresh raspberries or blackberries, they seem to “disappear” before making it to any cooking or baking recipes I had planned.
But…mwahaha…self-discipline somehow prevailed this week, and my precious little carton of raspberries lasted long enough to make it into these delicious muffins. And I am so glad they did. These muffins are absolutely fantastic! The raspberry and white chocolate combo was heavenly, as predicted, and the hint of lemon juice added a nice fresh kick to the batter. Delicious!!
