…this pepperoni Italian chopped salad is here for you! ♡

It’s loaded up with a simple blend of chopped Romaine lettuce, zesty pepperonis, crisp peppers and onions and black olives. (Or of course, feel free to customize yours with whatever pizza-topping-inspired add-ins sound best to you!) Then give everything a toss with my favorite quick red wine vinaigrette and add a generous sprinkling of freshly-grated Parm. And this deliciously pizza-inspired green salad can be ready to enjoy in no time!

Pepperoni Salad Ingredients

  • 2430 pepperonis, quartered
  • 1 (10-ounce) package romaine hearts, roughly chopped
  • 2 Roma tomatoes, diced
  • 1 green bell pepper, cored and diced
  • ½ small red onion, diced
  • ½ cup sliced black olives
  • ½ cup freshly-grated Parmesan cheese

Red Wine Vinaigrette Ingredients


Instructions

  1. Make the vinaigrette. Whisk all ingredients together in a small bowl (or shake all ingredients together vigorously in a sealed jar) until completely combined.
  2. Toss the salad. Combine the pepperoni, romaine, tomatoes, bell pepper, red onion, olives, and dressing in a mixing bowl and toss until evenly combined.
  3. Serve. Serve immediately and enjoy!

  1. I had such a giggle now when I read about the celery fail. That happens to me time and time again even though I have so many plans to use them.
    Great salad! Hurray for pepperoni!

I don’t buy pepperoni, but occasionally my husband gets to the grocery store and he will buy it.  The bag doesn’t last a day.  I don’t know how that man can eat so much meat so quickly-he eats it like they are chips.  I gotta convince him to put them on a SALAD next time.  That’s the way to go! :)

  3. This salad looks great and I love the addition of the pepperoni! I am 100% with ya on the celery. I tell myself it’s going to be my afternoon snack and I’ll use it in soup, and so on… :)

  4. I have a similar version of this salad in my queue to post. You can never have too many Italian salads with tart vinegar dressing. Gorgeous! PS I’m shocked to discover you’re not a fan of the black olive! But, we can still be friends.

    I have very picky eaters so I don’t add the onions or peppers or that basically just the lettuce,olives,pepperoni and shredded cheese with a zesty Tuscan Italian dressing and my luckiest water BEGS for this salad.
