Pineapple, Mango and Avocado Salsa

So can you tell I’ve had fresh pineapple in the house this week?? :)  Couldn’t resist…for $1.99, had to buy at least two!!

After using them to make this fabulous dessert and a smoothie, decided to combine them with two of my other absolute favorite produce section finds to make this salsa! Yep – avocados and mangoes were BOTH fresh, ripe, and on sale this week. Love it!

I actually made this salsa with a friend last week in Denver, and then recreated it when I arrived home. And it has been fantastic! Have already used it atop blackened tilapia, chicken, shrimp lettuce wraps, bruschetta, and of course….just on regular tortilla chips. YUM! (And yes, this recipe makes a large batch!!)

Best of all, it’s colorful and packed with fresh flavor and nutrients. A definite “keeper”!!

Description

You’ll love this fruity Pineapple, Mango & Avocado Salsa recipe! A fresh and delicious salsa that everyone will love!


Ingredients

Scale
  • 1/2 fresh pineapple, cored, peeled and diced (mine yielded about 2 1/2 cups)
  • 1 avocado, peeled, pitted and diced
  • 1 mango, peeled, pitted, and diced
  • 1 jalapeno, seeded and finely chopped (use more/less to taste)
  • 1/2 red bell pepper, cored, seeded, and diced
  • 1/2 cup chopped green onions
  • 3 Tbsp. chopped fresh cilantro leaves
  • 3 Tbsp. lime juice
  • 1 Tbsp. olive oil
  • 1/2 tsp. garlic powder
  • salt and freshly ground black pepper

Instructions

  1. Combine all ingredients in a bowl, and stir until mixed.  Serve immediately, or refrigerate covered to store.

Ali’s Tip:

If you’re planning to use this over multiple days, I’d recommend preparing the avocado separately (dicing it just before each use). Otherwise, it may brown up on you pretty quickly!

  1. Ooooh!! Looks like another winning recipe!♥ I’m eagerly awaiting our pineapple to go on sale. =)

    Any suggestions for an alternative to cilantro? I wish I liked it, since it’s in so many dishes.

    • Hi Erica! Yes, we were lucky here with the sales in January! I’m usually all for buying fruit in season, but with these I couldn’t resist. ;)

      As for an alternative to cilantro, I’m not quite sure. On this one, you could probably even leave it out. But otherwise, flat-leaf parsley might work well! Or chives? Not too sure…

  2. This is right up my alley. Anything with pineapple or mango in it…well…that’s for me. I used to live on an avocado plantation in Hawaii and couldn’t stand them then, but I love avocados now. What a treasure of a recipe. I’m trying it.

    • Wow, Susan! I can’t imagine living on an avocado plantation! That would totally be my heaven!! (Although I’m sure there is a thing as “too much avocado” :-)) Glad you’ve rekindled your love for them, and hope you enjoy the recipe!

  4. Yum! Last week I made mahi mahi with a tropical mango and pineapple salsa. It never occurred to me to add some avocado, as well. This looks wonderfully fresh.. Can’t wait to try it.

  6. I tried it today, and it is REALLY delicious!
    We didn’t have any cilantro, and instead of lime juice we used lemon juice, but it still tasted amazing.

    I had to blend it for my mom, because she can’t chew at the moment, and it was still delicious. An adult variation to all the babyfood she’s been eating lately ;-)

I purchased some beautiful butterflied pork chops today’ which will be prepped in a pineapple juice based marinade, and on the way home from the market, I told my hubby I was going to make a salsa with pineapple, mango and avocado to go with them, and Voila! here it is! Am really looking forward to giving this a try!
