ro*tel party & giveaway

Any of you Instagram followers will know that I absolutely LOVE spending Wednesday nights with my small group from church. Well, now that our group has grown to around twenty friends, we probably fall in the “not-so-small” group category now. :)

But I adore each of these friends, and look forward to the hilarity, stories, discussions, honesty, thoughtfulness, wisdom, craziness, and love that abound every Wednesday night. And once or twice a month, I also look forward to our dinner parties!!! Oh yes. As much as we love diving into deep discussions, we also love diving into some seriously good food.

So when RO*TEL asked me to host a “Spring Into Summer” party with some good eats, this crew was more than happy to party it up! We lucked out last week with an absolutely beautiful May evening, so we threw the windows open, laid out a rockin’ spread of summer-y food, iced the drinks, set up the yard darts, and were ready to par-tay! I also decided to branch out and try creating some new recipes with RO*TEL, so brought along this delicious queso blanco, black bean and mango salsa cups, stacked roasted vegetable enchiladas, salsa, and my new favorite Coke Float Push-Up Pops. And they were totally delicious! You’ll have to check out the recipes here this week.

  1. BLT Pasta Salad is one of my favorite summer recipes. Just bacon, lettuce, tomatoes, a teensy bit of onion, pasta (medium shells work great), and enough mayo to make it moist.

    Also, I cannot tell you how much I’d love to win this giveaway – we’ve been eyeing an outdoor game set for a while, and I love me some queso con rotel!

  6. My favorite summer recipe is my mom’s mango avocado salsa. It’s so bright and colorful, and of course, delicious!

  7. My favorite summer recipe is mozarella bruschetta. Spread pesto over baguette slices and place diced tomatos and mozarella cheese on top. Broil in the oven for a few minutes until the cheese melts and enjoy!

    My all time favorite summer recipe HAS to be tomato cucumber pasta salad. Dice up a cucumber and a tomato, throw it in with some al dente rotini noodles. Cover with 1/2 a bottle of your favorite italian dressing and sprinkle half a bottle of McCormick’s “salad supreme” on top. Mix well and enjoy!

  26. For a quick and easy summer meal, we like to do Hobo Packets. Just about any combination of meats and veggies will work. Wrap in a foil packet, add seasonings, put on the grill (or in the oven) and cook. They always turn out different–and they’re always delicious!

    Grilled Salmon with mango salsa, we just had it today and it was so delicious!

  55. My favorite thing to make in the kitchen requires no cooking. Its hot in the summer. I don’t like heat. I slice up some fresh buffallo mozzarella, pick some basil and tomatoes out of the garden, and slice up some fresh bread. If I can endure the heat of the toaster, we toast it, otherwise its just fresh. That combo is my favorite. We eat it for dinner often in the summer.
