10-Minute Ice Cream Pie

I actually made and photographed this ice cream pie at the beginning of the summer, but kept forgetting to post it! Oops!!! So alas, as we enjoy our final days of this beautiful season, I offer you another summer favorite — ice cream pie! :)

The fabulousness of this recipe is that it requires no ice cream maker (unless you really want to earn an extra gold star and go “homemade”), only takes 10 minutes to create, and is a guaranteed crowd-pleaser. I’m not kidding. Every time I make one of these (which is often when I run out of time to cook something else!), people go nuts over them. And they disappear in a snap. :)

So if you love ice cream, or would love a fun dessert project for the kids, or are looking for an emergency quick dessert recipe, or….are simply craving an ice cream pie….you should totally give this a try! I’ve included the method (can hardly call this a “recipe”) below, with lots of ideas for variations. Enjoy!!

10-Minute ice Cream Pie

Description

Looking for a fun dessert project for the kids? You will love this 10-Minute Ice Cream Pie recipe!


Ingredients

Scale
  • half gallon (2 quarts) favorite ice cream or sorbet
  • 1 (9 inch) pre-made cookie or graham cracker crust
  • Favorite toppings (chocolate chips, chocolate syrup (or Magic Shell), sprinkles, chopped fruit, candy bars, etc.)

Instructions

  1. Let ice cream thaw until slightly soft and scoop-able. Then gently spread a layer in the pie crust, approximately 1″ thick. Add in a light layer of toppings on top. Then add one more 1″ thick layer of ice cream, and add more toppings on top.  Freeze the pie until it is firm again, then slice and serve.  (Top with whipped cream if you’d like.)

Mint Chocolate Chip:
Mint chocolate-chip ice cream, Oreo crust, chocolate chips, chocolate syrup, chocolate bar shavings

Mocha:
Coffee ice cream, Oreo crust, chocolate syrup, chocolate-covered espresso beans

Strawberry Banana:
Strawberry (or any fruit) ice cream, graham-cracker crust, chopped strawberries and bananas (or other fresh fruits)

Toffee Caramel:
Toffee ice cream, graham-cracker crust, crushed Heath Bar bits, caramel topping, chocolate syrup

Caramel Peach:
Peach or vanilla ice cream, graham-cracker crust, caramel sauce, diced peaches (all the better if caramelized!)

  2. I made one of these last night for guests and everyone loved it! I used vanilla wafers for crust – didn’t crush – just lined them up in pie pan. Covered with layer of cappuccino chocolate ice cream, topped with layer of toffee bark ice cream. Served with hot caramel sauce – yum!

  6. I made this for an ice cream social last weekend. It was a huge hit. After reading the Mocha idea, I altered it to be like the mud pie we served at an ice cream shop I worked at many years ago. (I had no idea they sold Oreo crusts pre-made! YAY!) Ok, so the way we did it was to use hot fudge. Once the Oreo crust was made, we put on a layer of hot fudge. In this case, I got a jar of Hershey’s hot fudge and just spread it over the bottom like peanut butter (About 1/4-1/3 of the jar). Then I froze it. Then I used coffee ice cream and was happy to see the Breyers on sale. I did not add a layer of topping in the middle, like the recipe suggests, but made a dome shape with the ice cream for extra height and to use up all the whole half gallon. (The premade Oreo crust is only 8″ so it holds less ice cream.) Once it’s good and frozen, I spread on the rest of the hot fudge over the entire top, again, without heating it. (It slipped a bit from the dome shape, so I had to freeze it again and add more.) Then sprinkle chopped pecans on top and all done. Let it harden in the freezer overnight and packed it in a cooler with lots of ice to get it to the soiree. Party-goers could add whipped cream on top if they wanted and sprinkle a few more nuts too.   7. You have to soften the ice cream (15 min) and then refreeze until hard (approximately 30) so total time for this would be close to an hour.
