I’m not usually one to make recipes very far in advance for the blog. But all of the 5-ingredient soup recipes you’re seeing on the blog this week were actually made last weekend the day before I moved. (Hence the even more minimalistic background/props than usually — everything was packed!)  I knew that my kitchen was still another 2-3 weeks out from being finished, so I planned ahead to have an entire fridge full of soup to enjoy. Lots and lots and lots of soup. :)

Still, all of these recipes have reminded me how good the classics really are. I’m definitely all for creative recipes and experimenting in the kitchen. But I was reminded with this one that it’s pretty hard to beat a simple bowl of warm tomato soup.

And when made with just five ingredients, this recipe is tomato soup at its purest. And I might argue, it’s finest. :)

I usually feel this need to gussy up tomato soup with all sorts of extra herbs and seasonings. But when it comes down to it, the classic ingredients end up still being the best — tomatoes, onion, garlic, basil and cream. Just let the ingredients all simmer for awhile, puree, and enjoy.

It pretty much could not be more simple. Or more tasty. :)

Description

This classic tomato basil soup recipe is made simple with just five everyday ingredients.


Ingredients

Scale
  • 3 (14 oz.) cans diced tomatoes, with their juices
  • 1 medium white onion, chopped
  • 3 cloves garlic, minced
  • 1 handful basil leaves, julienned
  • 1/2 cup heavy cream

Instructions

  1. Add tomatoes, onion, garlic and basil to a large saucepan and stir to combine. Heat over medium-high heat until nearly boiling, stirring occasionally. Reduce heat to medium-low, cover, and simmer for 10 minutes.
  2. Use an immersion blender to puree the soup until smooth. (Or alternately, transfer soup to a traditional blender and puree until smooth, then return to pan.) Stir in heavy cream until combined.
  3. Season with salt and pepper if needed. Serve warm.

  12. I made this for dinner tonight and I really liked it! It’s so simple and healthy. I used what I had on hand: a can of diced tomatoes, a can of tomato sauce, and two ripe tomatoes. I also added a bit of chicken broth. Will be making this again!

  14. This is absolutely delicious, and my picky four year old ate it and said ‘yum yum’. I just used onion, garlic, two cans of tomatoes, bit of raw sugar and some vege stock.   15. Living in France on a limited budget this year, and this is my favorite meal that I have made so far! It turned out delicious – and a little bit of freshly grated parmesan on top made it perfect. 

  16. Try this little twist to get a deeper and sweeter taste:
    Fresh tomatoes instead of canned
    Yellow onion instead of white
    Fry the onion translucent or light brown before adding the other ingredients

  17. I made this last night with grilled cheese! I am dairy free, so I subbed coconut milk for the cream.  Delicious, and so easy! Thank you!!

  18. Just made this chili :) Clean, simple, fresh !! It’s not time consuming or complicated. Less is more! Fabulous chili. I used all market fresh, organic ingredients. Came out delish! Sprinkled with a little Tex Mex Cheese, yummy and filling. Thanks!!! 

  19. Can this soup be made vegan? without the dairy? Would it taste as good if it was made with almond milk?

    • Hi Janet! Yes, we think this would still be good made vegan — you could do almond milk or coconut milk (from the can or carton). We hope you enjoy!
