Many of the recipes I post on here are creative and new to me. And many of them are tried and true favorites I’ve made for years. This one happens to be in the latter. :)

Indeed. A simple apple and spinach salad. With bacon (yes, please)  And toasted pecans (or candied…mmmm). And some tart cheese (or cheddar). And a few red onions (keep a mint nearby). And….whatever else I may feel like throwing in (I’ve made a long list of other favorite ingredients below).

You pretty much can’t go wrong with this one. So grab your apple for the day and enjoy!

  • Shredded rotisserie chicken (or grilled chicken strips)
  • Roasted or dried apples (instead of fresh)
  • Dried cranberries or cherries
  • Other favorite greens (Romaine or arugula)
  • Turkey bacon (instead of regular)

  1. Another delicious looking apple recipe. I agree and think that roasting the apples would be a nice touch.

  2. I love apples in salads.
I especially like Chicken Salad with Apples:
1 Apple Diced (Gala, with peel on)
1 chicken breast Cooked and diced
    1 rib of celery diced
1/2 c. or more toasted pecan pieces
Mayonaise to taste. I like alot!

  3. I think I’ll have to try this one, minus the bacon and feta, plus the chicken and dried cranberries! I really love (love!) spinach, though, so that stays :) My husband thinks I’m crazy with my love for spinach; as long as something in a recipe even remotely resembling something green, I try to substitute spinach!

  4. Oooh I love bacon! This salad looks amazing!

  5. My husband and I went out for dinner last night and I ordered something very similar to this! Such a perfect combination!

  6. This is just like a spinach salad I get at a local restaurant, it is delicious! They also add chicken to make it more of a meal and use blue cheese instead of feta. It’s my favorite salad!

  7. That looks absolutely delicious! I’ll definitely have to try it!

  8. I don’t think I’ve ever had an apple salad! This one looks like a good one to try!! Yummy!!

  10. Would it still be good without the cheese? I’m lactose intolerant.

  11. I’m definately going to try this one. Looks beautiful and sounds delicious!

  12. Yumm, you had be at bacon :)

  13. My favorite salad is apples, spring mix with goat cheese (mmmm goat cheese!) and a tahini dressing. Simple

  14. mmm–bacon!

  15. I adore apples and pecans with spinach, will definately try with bacon next time!

  16. Does chicken salad count? :) I’ve gotten totally hooked on putting some diced apples, craisins, and curry powder into my chicken salad. I can’t get enough of it.

  17. Wow – this recipe combines almost all of my favorite ingredients into one healthy, attractive and yummy dish! Thanks so much.

  18. Roasted apples! I am drooling. And writing these ingredients on my grocery list.

  19. I’m saving this. I’m a vegetarian, but I am sure it would taste just as good with soy bacon. I am actually quite fond of slicing apples and throwing them in with mixed salad greens, pears, and dried cranberries. ooh, and almonds. love almonds.
