Cake Batter Rice Crispy Treats

Just when I thought I had tried every rice crispy treat recipe under the sun….this recipe shows up on StumbleUpon.

I may or may not have immediately run to the store to by a cake mix to make it.

And…had a little too much fun playing with those gorgeous, colorful sprinkles.

And…enjoyed every single, glorious, hint-of-cake-batter-flavored bite.

And…shared the rest with friends so that I didn’t eat too many bites.

And…now I share it with all of you.

And…you should make some.

:)

Description

You will love this bright and colorful cake batter rice crispy treats recipe! Great for special occasions!

Ingredients

Scale
  • 4 Tbsp. butter
  • 1 (10 oz.) bag of mini-marshmallows
  • 1/2 cup yellow cake mix (the dry cake mix, not prepared into a batter!)
  • 5 cups crispy rice cereal
  • 1 (1.75 oz.) container of sprinkles

Instructions

  1. Melt butter in a large saucepan over low heat and add marshmallows. Stir until they begin to melt, then remove from heat. Whisk in the (dry) cake mix, then stir in cereal so it is completely coated with marshmallow mixture. Sprinkle in half of the sprinkles and briefly stir. (Don’t stir too much or the sprinkles will bleed out their color.) Press the mixture into a baking dish (any size will do) and top with remaining sprinkles. Let sit for about 30 minutes before cutting. I find spraying a knife with nonstick spray helps to cut them cleanly.
  2. *Disclaimer: You consume dry cake mix at your own risk.*

  2. Those are unforgivably cute!

  3. Oh yeah, this looks so great!

  4. I have been dying to try these! Good to know you thought they were delicious too!

  5. I think the rice krispie treat will continue to evolve until the end of mankind…this rendition, I must say, is particularly genius.

  6. But why didn’t you use funfetti cake mix? Double the colorful madness!

This looks amazing, though. Going on my list!

  7. Yeah, I need to make these immediately. What an amazingly brilliant idea!

  8. These sound so easy and look so fun! They’d make great slumber party treats :)

  9. I can’t believe I just bought mini-marshmallows and rice krispies to make treats. And here is your innovative recipe to make them really special. Thanks so much.

  10. What a fun treat!

  11. These look awesome. I bought the stuff last night and I’m going to try it with my kids tomorrow!

  12. DANG. i just finished my cake mix with the blondies i made. def need to buy more bc i just make these!

  13. Me again :) I had to make these so i did, just last night and LOVED!!!!! them! Can’t get over how stink’n fun the sprinkles are! I even did a post about them on my blog. summerdays96.blogspot.com
Thanks a ton for the new fav!

  14. Mine got a little string-y, if you know what I mean. Is that because the marshmallow mixture has cooled too much when you’re stirring in the cereal? Any tips? : )

  15. has anyone ever tried a gluten- free version of this?!

    • i’m planning on trying the gluten free version today! i bought betty crocker gluten-free yellow cake mix to substitute. i’m guessing that they will turn out the same, but i’ll let ya know!

    • How did they turn out with the GF cake mix?

  16. these were delish! i also upped the cake mix to 1/3 cup. it’s a good thing i made them for a barbecue or i’d have eaten way too many!

  17. did you have to bake cake mix first or just the dry out of box cake mix?

  18. LOVE THIS! I can even convert this to gluten free…WOO HOO! I have added your blog to my iPad’s home screen, as it is so fun & inspiring.

  19. I found you recipe on a friend’s pin on Pinterest. I just opened it to see how hard it is and well it totally isn’t hard. I am so excited to try this!!!

  20. I would nwver do this as cake batter needs to bake because of the eggs in it.

  21. You add DRY cake mix to this recipe, do not mix it according to the directions on the box. There are no eggs in this recipe. Perfeclty safe to eat Dee.
I am makignthis for the 4th of July with Red, White and Blue Sprinkles!

  22. Wow, I didn’t think rice crispie treats could get any better. These look delicious! Thanks for sharing. We featured this on our FB page as well!

  23. These look great – I know it wouldn’t be as bright but what would it be like to use chocolate cake mix and chocolate chips, instead of the yellow cake mix and sprinkles? I love chocolate – can ya tell? :-)

    • If you REALLY want a chocolate over load, go ahead I,,n use the chocolate cake mix, mini chocolate chips the really tiny kind, and cocoa pebbles instead of plain rice krispies.

  24. This looks absolutely wonderful! What a fun idea. I will have to try this for sure!

  25. Kelly: You can also make it with Cocoa Pebbles, for an extra chocolate kick.

  26. Absolutely clever! Perfect for a birthday party, children and adult alike!

  27. So, I actually made the cake batter according to directions on box and then added the batter. I don’t think enough of the egg probably got in there to make anyone sick. But the recipe is a little misleading because at the end it says in the tip to add “cake batter”:( To me that means a completed mix. They were still good just couldn’t really taste anything “cakey”.

  28. Just made these today, so cute and yummy with a touch of nostalgia!

  29. Made these they are awesome great idea thank you!

  30. THESE ARE AMAZING! Made them tonight, add 1/3 cup though so you can really taste the cake batter :] thanks for the recipe :P

  31. I just found your site through pinterest. Thanks for sharing this recipe… I plan to make it asap!!!

  32. Oh my! Sounds delish! I will have to try it with chocolate cake mix. Does it mix in enough so it’s not gritty?

  33. I am going to feature these on my friday favorites tomorrow. Come by and check it out! These look great.

  34. Thanks for this recipe! It’s very sparkly (daughter’s words). For “special” bakers like me who need to follow a recipe like a road map or I get lost and I don’t find my way, could you kindly change 10 oz. on the one whole bag because the first time I tried it I only used 10 oz. Yup. The second time I used the whole bag of marshmallows and the rice cereal actually mixed with the other ingredients the second time lol!

  35. Made these for my boyfriend and my little sister. Both are away at college! Its the perfect thing because I get sick of sending plain old rice krispy treats. I snuck a couple bites before sending them. Sweet recipe. I’m also loving all of these comments about new add-ins. My only question; What to do with extra cake mix?

  36. Do you know if I could do this with from scratch batter? If so what to leave out? We have food allergies in my family so I do everything from scratch, but I’m still in the baby stage of baking!
I think my kids would love this treat.
    Thank you

  37. So….what do you do with the leftover cake mix now that it’s reduced in size??

  38. These look amazing I will be trying them. Got a good laugh out of some of the comments!

Looking for a good use for the left over cake mix? Go to this blog for a recipe for Funfetti Cake Batter Dip. -I think any cake mix flavor would be yummy. Please don’t make the cake mix as directed though :) Just use the dry mix.

  39. I found this recipe from Pinterest and had to try them. They are very yummy. My only recommendation would be to add the sprinkles after you have already mixed the cereal and marshmallow mix for a little while. My sprinkles began to melt as I mixed. They still turned out delicious but would have been cuter with intact sprinkles!

  40. Thanks so much for this recipe! Just made them and I found I even needed to add more than 1/3c of the dry mix to get a recognizable cake batter flavor…probably more like 2/3 for me. But I love them!

Perfect idea, though! I love them!

  41. I LOVE this recipe thank you for sharing it! I was wondering if you made the cake batter like it says to on the back of the box and then added 1/3 cup into the melted marshmallows?

    Thanks!

  42. Do these need to be refrigerated? Also how well do they hold up in the heat of a summer day? Thanks they look great, and I want to send them to my husband which is why I ask!

  43. I cannot wait to try this recipe! I have seen a few differnt blogs that have this recipe posted and I am very excited to try it myself!

  44. Be sure to keep your leftover cake mix in the freezer. Just take the bag out of the cake mix box, roll down and secure with a rubber band. You can put it in a freezer ziploc bag. It will keep indefinitely. You can use dry cake mix (light colored: vanilla, yellow, white…) on top of any pie filling in a greased baking dish. Just drizzle butter over the dry mix and bake @350 for 30 min. Easy cobbler, or “crumble.”

  45. What do you do with the left over cake mix?

  46. Can you specify that you have to use DRY cake mix? I thought you had to use the mixed batter until I read the comments down below.

  47. This may be a dumb question but did you make the actaully cake mix batter or just use the powder from the box?

  48. Hey everyone! Sorry so late responding. I modified the recipe above to note that this calls for DRY (not prepared into a batter) cake mix. And also offered a suggestion for using the remaining batter to make cake mix cookies. See the note above.

Thanks so much, and so glad that you’ve tried the recipe! It’s so fun!! :)

  49. Just made these – LOVE ’em!! What a great idea! The hardest part about making them was letting them sit long enough for them to cool :o)
