At my most recent book club, my friend Kerry served a delicious tomato basil bruschetta.  And I have been craving all things caprese ever since.  So this weekend, I gathered some fresh ingredients from the market and decided to create a new appetizer — Caprese Phyllo Cups!

These simple little phyllo cup appetizer could not be easier.  All you need are five ingredients — any kind of tomatoes, mozzarella, fresh basil, balsamic vinegar, and of course, my favorite little phyllo cups (or you can make baked cups with wonton wrappers).  And less than ten minutes later, you can have an entire batch ready to serve and enjoy.  So quick and easy.  And so fresh and delicious!

I’m already looking forward to making these again.  I have a little hunch that may happen a lot this summer.   ;)

  • Prep Time: 10 minutes
  • Total Time: 10 minutes
  • Yield: 15 cups 1x

A quick and easy appetizer for caprese lovers!

  • 1/2 cup balsamic vinegar
  • 1 (15-count) package mini phyllo cups
  • 15 grape or cherry tomatoes, halved
  • 4 ounces fresh mozzarella, diced or torn into small pieces
  • 4 large fresh basil leaves, torn into small pieces

  1. Bring balsamic vinegar to a boil in a small saucepan over medium-high heat. Reduce heat to medium-low and simmer for about 3-5 minutes, or until reduced by half. Remove from heat.

  31. You recipe says to serve immediately..so, if these were to sit, sort of buffet style at a party, would they not be very good? Trying to plan a holiday party. :)

    • I think they would hold up for at least 2 hours. It depends how juicy your ingredients are, but they should hold up awhile! :)

  32. I’m a bit confused, so you don’t have to bake the phyllo shells at all?

  36. Where can you get the mini phyllo cups?

    • Hey Stephanie, you should be able to find them in the frozen pie crust/pastry section of most grocery stores. We hope that helps!

  45. Now that it’s winter, I don’t have access to fresh basil. Is there anything I can substitute? Pesto? Dried basil?

    • Hi Heather! If you can’t find any fresh basil, we do think pesto would be a good, close substitute. We hope you enjoy these!

  46. The only ones I see in the freezer section are not pre-baked .
So,just bake per instructions and then fill them with ingredients and serve?

    • Hi Sandy! Yes, that’s exactly what we would do. We hope you enjoy the recipe!

  47. Where do you find the phyllo cups? I’ve never seen them

    • Hi Bonnie! They should be in the frozen foods section near the pie dough and cakes, etc.. We hope you can find some and give this a try!
