Chipotle Lime Shrimp

There are some flavors that are just meant to be together. Peanut butter and jelly…. Strawberries and cream…. Salt and pepper… And one of MY favorites…chipotle and lime. Yum!

The wonderfully smoky, sweet and slightly spicy chipotle mixes perfectly with the tangy, sweet lime to make a delicious seasoning perfect for just about any meat, fish, seafood, salad dressing, vegetables, sauce…you name it!

So to kick off grilling season this year, I decided to pull out a bag of shrimp and make these delicious chipotle lime shrimp skewers. Although unfortunately, it was pouring down rain the day I made these this week. So I ended up “grilling” them inside on my grill pan….but they were still delicious!

I ended up using my favorite chipotle powder (available in your spice stores, or here online) instead of the canned chipotles in adobo sauce. But either would work. I just highly recommend using fresh limes instead of the bottled juice — much more fresh and flavorful!

So heat up your grill, or grill pan, or even your skillet to give these a try! I think you’ll love them!

Description

Spicy chipotle combines with tangy, sweet lime taking your grilled shrimp to a whole new level. You will love this Chipotle Lime Shrimp recipe!


Ingredients

Scale
  • 1 lb. shrimp, peeled and deveined
  • 3 Tbsp. chopped fresh cilantro
  • 1 Tbsp. olive oil
  • 1 Tbsp. brown sugar
  • 1 tsp. cumin
  • 1/2 tsp. chipotle powder
  • 1 lime, juice and zest

Instructions

  1. Mix the chipotle powder, cumin, brown sugar, lime zest, lime juice and cilantro in a bowl.  Add the shrimp to the marinade and toss until coated, then let the shrimp marinate for 20 minutes.
  2. Thread the shrimp onto metal skewers, or wood skewers that have been soaked in water for at least 10 minutes.
  3. Heat grill to medium-high, then grill the shrimp until cooked (pink and opaque), about 1-2 minutes per side.

Ali’s Tip:

These shrimp are amazing in shrimp tacos as well! Just add them, along with your favorite salsa, cheese, lettuce, avocado, black beans, and/or whatever else you’d like to a tortilla and enjoy!

  2. how much adobo? your recipe says to mix it but no quantity was listed….dying to try this!

    • Oops, Mary! That was a typo – I didn’t end up using the adobo in the final recipe. But you’re welcome to add in a 1/2 or whole teaspoon if you’d like!

  5. This sounds terrific! I’ve been a vegetarian for 6 years now but am finally startin to eat seafood again per my fiance’s badgering (hah, his name is david badger, that joke never gets old). Anyway, I love shrimp so this recipe would be pretty exciting for me to try out! Everything looks so great on here!

  9. Looks great but I’m confused. Do you marinate the shrimp in the liquid or just use that to baste while cooking?

    • it says marinate for 20 mins, but I am sure you can put a lil to the side and baste also.
