Coconut Margarita

Description

This frozen coconut margarita recipe is refreshing, sweet, and perfectly lime-and-coconut-y.


Ingredients

Coconut Margarita Ingredients:

  • 1/2 cup tequila
  • 1/3 cup freshly-squeezed lime juice
  • 3 tablespoons freshly-squeezed orange juice
  • 1-2 tablespoons simple syrup, if needed
  • coconut ice cubes

Optional Rim Garnish:

  • lime wedges
  • sweetened shredded coconut
  • coarse rim salt


Instructions

To Make The Coconut Ice Cubes:

  1. Whisk together the coconut water and cream of coconut in a mixing bowl until combined. Pour the mixture into ice cube trays, then freeze for at least 12 hours, or until frozen. (Cream of coconut does not always freeze completely, so if yours are not 100% solid, that’s ok.) Keep frozen until ready to use.
  2. !To Rim The Glasses:
  3. Run a lime wedge around the top of each glass until it the top 1/4-inch or so is moistened. Dip the glass in a bowl that has been filled with either shredded coconut and/or coarse rim salt. Chill the glasses in the freezer for at least 5 minutes before filling with the margarita mixture.
  4. If your coconut is not sticking, you may need to pulse it a few times in a food processor until it is the consistency of coarse salt.
  5. !To Make The Coconut Margaritas:
  6. Add all ingredients (including the coconut ice cubes) to a blender and pulse until combined. Taste the mixture, and add simple syrup to sweeten if needed. You can also add extra ice cubes (either regular, or more coconut ice cubes) to thicken the consistency, if needed
  7. Pour into prepared glasses and serve immediately, garnished with an extra lime wedge on top if desired.

    i love the idea of a coconut margarita! i wish I had all the ingredients to make this! must head to store. i also wish there was a roller coaster near me but i’d have to travel at least 2000 miles!

    Last year was my 13 year old brother’s first time on a roller coaster and he didn’t want to go by himself so I ended up having to go because neither my mom or my sister wanted to. That was my first time in 10 years too. Ahhh. I remember back in my teens I had a blast and went on the same coasters multiple times but this time once on each kind was enough but my brother went on multiple times on his own afterwards. I have passed on the torch to the next generation.

    This margarita looks and sounds delicious. I love coconut and margaritas.

    I’m not much of a margarita drinker, but this sounds absolutely wonderful. A well-deserved treat for having the courage (or foolhardiness) to ride roller coasters. I do admire you for riding big roller coasters. They terrify me, and I seem to be constitutionally incapable of having fun while in a state of terror. I’m also happy to see that you are following through with challenging yourself. That should help make unexpected challenges easier.
