Creamy Caramel Apple Dippers

‘Tis the season for babies, apparently!  I have so many friends right now who are expecting little ones, and spent the evening last night with a close friend who just delivered two days ago.  So fun!

Today I’m excited to also be celebrating one of my blogging friends who is expecting — Jen from My Kitchen Addiction!  Jen’s site was actually one of the first food blogs that I began reading years ago, and it has been amazing to follow along as she has built her beautiful blog (also including her awesome Kitchen Bootcamp series) and shared her life with us along the way.  Jen is also one of those bloggers who is a tremendous encourager, and her kind words have meant a lot over the years.

So a group of us bloggers are happy to be throwing her a virtual baby shower today!  My contribution, since this cute little baby is going to be coming during the fall, are these cute little Creamy Caramel Apple Dippers.  I made this creamy caramel dip with some yummy homemade caramel (don’t fret – you just need sugar, water, cream and 10 minutes!), light cream cheese and a touch of cinnamon.  Then serve it up with some sliced apples, and you’re ready to go!  Kids and adults of all ages will love these.

Congrats again to Jen!  Can’t wait for your little one to arrive!!!

Creamy Caramel Apple Dippers

A delicious creamy caramel served with sliced apples makes these Creamy Caramel Apple Dippers a fun favorite!

  • 1/2 cup sugar
  • 1/4 water
  • 1/2 cup heavy cream
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. cinnamon
  • 1 (8 oz.) brick low-fat cream cheese, room temperature
  • 2-4 apples, cored and thinly sliced

Briefly stir together granulated sugar and water in a small saucepan and bring to a boil over medium-high heat. Continue cooking, without stirring, until mixture turns dark amber in color, about 6 to 7 minutes. (Watch very carefully to be sure that it does not burn. It can go from amber to black very quickly!)

Remove from heat and slowly add in cream (just start with a tablespoon or two), stirring with a wooden spoon until completely smooth. (Be careful, as the mixture will definitely bubble up and possibly splatter a bit as you add in the cream.) Then stir in the vanilla and cinnamon until well-combined. Set aside until cool to the touch, about 25 minutes.

Using an electric mixer, mix the cream cheese on medium-speed until completely smooth. Drizzle in the caramel and mix on medium speed until smooth. Serve with apple slices.

Ali’s Tip:

You can also serve these with some sea salt sprinkled on top for a salted creamy caramel dip!
