2017 has officially been deemed the Year Of The Cabbage Soup in our house.

Oh my goodness, you guys, I have been craving (more Italian-flavored) Cabbage, Sausage and Potato Soup nonstop this winter. And thus, cooking up batch upon batch of it to stay warm. (And by the looks of the Gimme Some Oven photos I’ve been following on Instagram, you all have too. ?)

But this week, when the cabbage soup craving hit for the billionth time, I started thinking that it might be fun to try an Asian flare to this soup, maybe seasoned with some yummy ginger and toasted sesame oil and green onions, in lieu of my traditional Italian seasonings. And then it hit me — cabbage, pork, carrots, onions — these are all of the ingredients in egg rolls! Why not just make an egg roll-inspired cabbage soup?! Maybe with some crispy egg roll wrappers (or store-bought crispy wonton strips) sprinkled on top?!?

Oh yes. Yes, yes, YES.

I mean, honestly, I don’t know how a soup could really go wrong with all of these flavors. But especially with that magical toasted sesame oil (affiliate link) sprinkled in at the end, this soup was downright irresistible. So savory, so fresh, and SO DELICIOUS.

I just simmered everything together in the stovetop, and it was ready to go in a little over 30 minutes. But this recipe could also easily be adapted to the Instant Pot (pressure cooker) or slow cooker, if you’d like. I just recommend browning the pork on its own beforehand, then you can basically cook everything together afterwards.

Also, if you don’t eat pork, feel free to sub in ground or shredded chicken instead. Or, a mix of baby bella and shiitake mushrooms (and/or crispy tofu) would be a fabulous other option if you wanted to make this meatless and vegan. Just like with traditional egg rolls, just about any protein will work here.

Also, if you happen to have access to those cute little store-bought crispy wonton strips (usually available in the salad dressing aisle), those would be a fabulous crispy finish on this soup, similar to egg rolls. Or you can do what I did and just fry some egg roll wrappers yourself. Or sub in toasted sliced almonds for something crispy. Or just nix the crispy topping altogether. ? (The soup will still be delicious without it.)

Description

This Egg Roll Soup recipe brings together all of those irresistible egg roll flavors we love…in a soup!!  It’s quick and easy to make, and easy to customize with pork, chicken, or mushrooms (


Ingredients

Scale
  • 1 pound ground pork (or see other alternatives below!)
  • 2 tablespoons olive oil
  • 1 medium white onion, peeled and diced
  • 2 medium carrots, peeled and diced
  • 3 cloves garlic, minced
  • 1 small green cabbage, chopped into bite-sized pieces
  • 68 cups chicken or vegetable stock
  • 2 teaspoons ground ginger
  • 1 teaspoon toasted sesame oil
  • optional toppings: toasted sesame seeds, thinly-sliced green onions, homemade fried egg roll wrappers** (or store-bought wonton strips)

Instructions

  1. Add ground pork to a large stockpot and cook over medium-heat for 5-6 minutes, stirring and flipping occasionally, until the pork is lightly browned.  Use a slotted spoon to transfer the pork to a separate plate, and set aside.
  2. Add the olive oil and onion, and stir to combine.  Sauté for 5 minutes, stirring occasionally.  Add the carrots and garlic, and sauté for 2 more minutes, stirring occasionally.  Add the cabbage, stock, ginger, and cooked pork, and stir to combine.
  3. Continue cooking until the soup reaches a simmer.  Then reduce heat to medium-low, cover, and simmer for 15 minutes, or until the carrots and cabbage are nice and tender.  Stir in the sesame oil until combined.  Then taste and season the soup with a few generous pinches of salt and black pepper as needed.
  4. Serve warm, garnished with your desired toppings.  Or refrigerate in sealed containers for up to 3 days, or freeze for up to 3 months.

Notes

*Feel free to use ground pork (or pork sausage, or shredded pork), ground chicken (or chicken sausage, or shredded chicken), smoked sausage, or mushrooms in place of ground pork if you’d like.

*To make homemade fried egg roll wrappers, just cut the egg roll wrappers into your desired shape/size.  Then briefly fry (in your preferred high-smokepoint oil) until golden.

  4. I made this tonight with shrimp. I did not have toasted sesame oil so i added Trader joe’s Spicy yuzu sauce for a kick. I think next time I’ll add mushrooms and do a pork/shrimp combo for more flavor. Also wish i had had ramen noodles or the wonton crisps. Very yummy and super easy to throw together! With chopping time, took 30 min total. And most of the time was just letting it simmer in the pot.






  5. Yummy and quick. Can’t get better than that. I used seasoned ground chicken and it added so much flavor to the soup. The broth was very nice with the ginger flavor. I definitely am going to be eating more of this soup as I don’t think the calories are very high. I think I will try throwing more veggies in next time too.

  6. I used some ground chicken I had cooked up and frozen for a PF Chang’s lettuce wrap copycat recipe. It was the perfect addition! It used rice vinegar & I bet that would be yummy to add a splash of in this original recipe! I did add all the other ingredients except the sesame oil and it turned out great :)

  12. Great recipe! I used pork sausage & sauted the onion, garlic & carrots in regular sesame oil. Also used no sodium chicken broth & only needed to add 1/2 tsp salt. Great flavor, will definitely make again.

  14. Incredibly easy soup to fix but lacked pizzazz so we added a splash of soy sauce, chili garlic sauce, and lots of pepper. It was very hearty and made enough for lunches the next day. Definitely recommend the wonton toppings and green onions. Thanks for an easy, filling, and inexpensive meal!






  15. This was REALLY good and easy to make. I had extra veggies (peas, mushrooms & bok choy) that I needed to use up so I threw them in. It’s a great recipe that you can tweak depending on the saltiness you like- we like salty so I added some soy sauce and then served over ramen noodles. YUM! It has landed a spot in my soup rotation, thanks for the great recipe!

  17. I pinned this abt a year ago. And kept saying I’ll do it one day. I am now kicking myself for not doing it sooner!!!! I added red bell pepper. Used fresh ginger. OMG I almost forgot to make it a little more hearty I added pre made pot stickers. And for add ins- cilantro and a slash of lime. My new favorite soup!!!!!!






  18. Made this for the 1st time and it is EXCELLENT! Tastes just like an eggroll. I used chicken breast and leftover pork loin rather than ground pork. It is going to be a regular in my house….Fast, delicious, healthy!!!






  19. We really liked this. Of course there were changes because of what was on hand. Used chunks of garlic and ginger to flavor. I also splashed some rice vinegar in it. Subbed our favorite soy type sauce for the salt. Chopped some of the raw wonton wrappers to use as noodles. I also added mushrooms and beef. I plan to print the recipe, write in our adjustments and put it in the soup rotation. This was a happy soup for all of us. I cooked for 11 today. Hard to make so many palates happy. This one worked.

  25. This is a great way to use up leftovers, (if you have any), from Egg Roll in a Bowl! Just add broth and warm up. 2 meals with one “hands on” time! Or more if you freeze soup like I do.

  27. I changed this recipe a bit. I added diced mushrooms, 2 chicken bouillon ( make sure you add salt after tasting), a few dashes of Accent and some Sirrachi pepper. U think I will add a little more ground pork next time. Perfect.






  28. Although this soup was relatively easy to make, it seriously lacked in the flavor department and I had to keep adding things to brighten it up and it still wasn’t working. Extra ginger, soy sauce, bean sprouts, garlic powder, LOTS of salt and pepper… it just didn’t have the flair I was looking for. However, after some jazzing up, it made for a pretty quick meal. Everyone seemed to love this soup and I’m sad that I didn’t.

    • I froze some and it turned out well. The pork got a little crumbly, but everything else froze/thawed well. Made an awesome work lunch.

  31. This is great! I thought it was lacking a little flavor, so I added a splash of soy sauce, a squeeze of lemon, and some siracha when serving. It made it taste amazing! Almost like Pho!

  34. Oh my. Where do I begin with the adjustments I made to this recipe? First of all, if you’re looking for an actual egg roll taste instead of just chicken broth you will need more than ginger. I also included Chinese 5 spice and soy sauce and continued alternating until the broth was to my liking. The base of this recipe is great but before I got creative, it was definitely lacking in the flavor department.

  41. I made this (vegan) using Sweet Earth Foods vegan ground beef. I added a couple tablespoons of soy sauce. This recipe is delocious. I ate 3 bowls the first day I made it. You can really add a lot of cabbage and make it very healthy.






  42. Yum, this recipe hits the trifecta: easy, inexpensive, and delicious! I only had a half pound of ground pork so used that much and thought it was enough. Freezes well, and also great with ramen noodles (skip the seasoning packet, just add the noodles and cook them in your soup). Thank you!






  43. OMG!!!! It’s late July and I’m eating soup — and loving it!!!
    This is da bomb! I added a generous amount of garlic powder, onion powder and pepper to the pork as it browned. Used Napa cabbage and added some sliced celery. As someone else mentioned, I put a splash of rice wine vinegar and some low sodium soy sauce. To serve, I used the wonton strips, a drizzle of sweet chili sauce and sliced green onions. My hubby loved it and called it a “keeper”. I heartily agree! Thanks for this tasty recipe!






  44. This soup tasted kind of bland when it was done so I read the reviews and added a few tablespoons of chili garlic sauce and a splash of soy sauce and rice vinegar. It definitely spiced up the flavor but I still don’t think this soup will quite make our rotation. It was great for something new to try though.

  47. Very good. Reading some of the comments I added chili paste, low sodium soy sauce and a splash of rice wine vinegar. I toasted a few cut up eggroll wrappers in a couple tablespoons of olive oil as a topping along with green onions. A bit of hoisin sauce brought it up a notch too. Thanks for the recipe, I was craving cabbage for whatever reason!






  48. Made this for lunch today and it’s perfect for this rainy fall day. I used ground chicken and added the rice vinegar and soy sauce that some other comments said to do. I also added chili garlic paste to give it a kick. Delicious!
