Would you like a little pizza with those beautiful heirloom tomatoes?!? :)

Ha! Pretty sure I went to town on this one. Had some leftover colorful heirlooms from this salad I posted earlier in the week for Week 3 of our “Tomato Love Recipe Exchange”. (Don’t forget to enter here for a chance to win this week’s giveaway!)  So I decided to turn them another easy dish — pizza!

I had some baby arugula and goat cheese on hand, so those were the lucky additional ingredients that paired with the tomatoes. But you could easily sub in different cheeses, or add some of your own favorite toppings. I just love using juicy fresh tomatoes occasionally in place of tomato sauce. All the better, of course, when they are beautiful heirlooms!!

Heirloom Tomato, Arugula & Goat Cheese Pizza

Description

A beautiful and delicious pizza topped with fresh heirloom tomatoes, arugula and goat cheese.


Ingredients

Scale
  • 1 medium unbaked pizza crust, homemade or storebought
  • 2 Tbsp. olive oil
  • 2-3 heirloom tomatoes, thinly sliced
  • 1/3 cup crumbled goat cheese
  • 1 cup fresh baby arugula


Instructions

  1. Preheat oven to 425 degrees.
  2. Lay pizza crust out on a floured surface. Brush the top of the crust with olive oil. Then layer on the sliced tomatoes and goat cheese.
  3. Bake for 10-12 minutes (or according to package instructions if storebought), until crust is slightly golden and the cheese has just slightly begun to brown around the edges. Remove from oven, then garnish with fresh arugula. Serve immediately.

    What a gorgeous, tempting pizza! I love the different colors of tomatoes. Caprese salad is my favorite…but it’s just not the same without wonderful garden/heirloom tomatoes :)
