One of my good friends has a rule that none of us are allowed to complain about the weather here in Kansas City when we’re around her. 😉

Somehow, though, this still happens all the time, since it always seems to be “unseasonably” something-or-other.  There’s always someone lamenting about the lack of snow this winter.  Or the return of a freezing windchill after an unusually warm week.  Or how every single meteorologist totally blew it predicting the “ice storm of the century” a few weeks ago.  Ya know, normal Midwestern weather small talk…

Well, the second that crosses over into complaining or I-can’t-believe-this-is-happening-ing, she’s there with her classic — “Guys!  We live in the freaking Midwest.  There’s no such thing as normal weather here.  You’ve gotta expect the unexpected.  It’s this way every single year, remember?!”

We’ve gotta admit — she has a point. 😂 😂 😂

So when the temperature took a nosedive again this week after a gloriously sunny weekend in the 60s, I bit my tongue and forbid myself to whine about it.  And, instead, dove back into full-on winter hibernating mode.  I pulled on my favorite ultra-comfy sweater and slippers, made a warm cup of my favorite hot tea, and got to work making a big batch of this favorite comforting soup to eat this week.

And it totally hit the spot.

Some of you already know and love this recipe — it was one that I shared on the blog about three years ago.  (👆🏻That was the original photo!)  But for anyone who missed it, I thought I’d bump it to the top of the blog again, since this recipe is a total winner and one I still make often.

One of the main reasons I love this soup is because it uses my favorite whole wheat pasta in the world, made by DeLallo.  I love it because it’s legitimately delicious, as opposed to most other whole-wheat pastas I’ve tried, which seem to fall in the good-for-you-but-not-so-tasty category.  This stuff = awesome.  And I’m especially partial to this particular whole wheat orzo, which I always keep stocked in the pantry for quick soups and sides.Italian Orzo Spinach Soup Recipe 3

I’m also a fan of this recipe because it’s packed full of fresh spinach.  (Or, you could also use fresh kale or collards in this recipe.)  Honestly, I sneak a few handfuls of spinach into just about any soup I make nowadays, since it’s such an easy way to add extra greens (that have such a mild flavor) to my meal.

And of course, I also love this one because it all comes together easily in about 30 minutes.  Just saute your veggies, then let everything simmer until the pasta is al dente and ready to go…

I like loading mine up with lots of Parmesan (and crushed red pepper, which I missed adding in the photo here).  But feel free to top yours with whatever sounds good.

Italian Orzo Spinach Soup

This delicious Italian Orzo Spinach Soup is simple, flavorful, and so comforting.

Ingredients:

  • 2 tablespoons olive oil
  • 1 small white onion, peeled and diced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 3 cloves garlic, peeled and minced
  • 6 cups chicken or vegetable stock
  • 1 (14-ounce) can fire-roasted diced tomatoes
  • 1 1/2 cups (about 8 ounces) DeLallo whole wheat orzo pasta, or other whole wheat pasta
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried rosemary
  • 4 cups loosely-packed spinach
  • salt and black pepper
  • optional toppings: freshly-grated Parmesan cheese, crushed red pepper flakes

Directions:

  1. Heat oil in a large stock pot over medium-high heat. Add onion and saute for 4 minutes, until soft. Add carrots, celery and garlic and saute for an additional 3 minutes. Add chicken stock, tomatoes, orzo (pasta), thyme, oregano, rosemary and stir to combine. Bring soup to a simmer, stirring occasionally. Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally, until the pasta is al dente.
  2. Stir in the spinach and cook for 1-2 minutes until it is bright green and wilted. Taste, and season with salt and black pepper as needed.
  3. Serve warm, garnished with your desired toppings.

  1. Hi I’m making this wonderful soup right now. I followed the directions but I have one question: my soup looks red in color due to the can if fire roasted tomatoes but your soup pics seem to look lighter and creamier. Did you add cream ?

  3. This is the best soup and has become a family favorite!  It is so easy to make and very satisfying!  Love all of the veggies.  I do add extra broth thought since it becomes thick with the 1 1/2 cups of orzo.  I guess you could reduce the amount of orzo as well.

  9. I love this soup and have made it two times. The first time I used regular orzo. The second time is used the whole wheat orzo listed in recipe. I had a major problem with the whole wheat orzo. When we ate it for dinner it was fine. I froze the rest. When I defrosted and heated the soup in the microwave the whole wheat pasta basically disintegrated. It turned to mush. The second day reheat was worse. So I will stick to using regular orzo for this soup because I like to freeze soups and i didn’t have that problem the first time I made it. I added chicken and extra broth to make it heartier. Thanks for a yummy recipe.

  13. Fellow whole wheat orzo lover here- it was on sale at Whole Foods yesterday, so I had to grab a few bags. Yesterday was also farmers mkt day and I got a huge bunch of fresh spinach and here I am! It’s a sunny but cool day and soup will be perfect for dinner. Thanks for the great recipe!

The first time using the exact recipe and adding a lean breast of chicken and the second time using chicken again but replacing the fire roasted tomatoes with 2 10 oz. cans of Rotel. The Rotel gave it a nice kick! I love this recipe. Going to make it again tomorrow for weekend noshing. Thanks!

  19. I love this soup! Ill admit ive never used whole wheat orzo, cuz i always forget to look for it. But i make it with regular orzo and its fab!! I use about half the amount of orzo…we are trying to go easy on carbs. Sometimes i add a little sliced chicken sausage too. Overall this recipe is fantastic. The roasted tomatoes are key…lots of flavor. 
    This has become a staple in my menu plans. It’s also an incredible go to meal when I’m running late or busy day….and also a great soup to take to a family who needs a meal.

  24. This looks DELICIOUS and I can’t wait to make it tonight!  Quick question:  can I use rice instead of orzo pasta (I don’t have any and can’t make it to the store before dinner)?

    If so, would I follow the exact same directions as if it were the pasta or cook it first?

  33. Pinned this recipe from Pinterest…sometimes you pin stuff because it looks interesting, it looks like it might be good, you’re hungry at the moment, whatever. I just made this soup and it is AWESOME1 I did a change, browned and added some ground pork because I like a little meat in my soup. That said, the poster is right, it is SO easy to put together! I used my pressure cooker, threw everything in, set the timer for 15 (more time than required), and I left it to make magic. The spices are perfect, not too overpowering, the orzo was perfectly done. THIS one is going into my ‘keeper’ file for sure! Thanks for sharing this wonderful recipe!

  34. I’ve been looking around for a recipe like this! My boyfriend says he likes “orzo soup” but of course has no specifics beyond that, and the fact that it has chicken. This recipe looks like the one I would like most, but do you have any idea how much chicken I should add for the BF?

    • Hi Nicole! Were you thinking of adding rotisserie chicken or chopped chicken breast? We’d say maybe 2 cups or so, but it’s totally up to you and how much meat your boyfriend might like. We hope you guys enjoy!

    • Hi Kristen! This would be just fine without the tomatoes — we would suggest a little red wine vinegar or lemon juice for some acidity though (just do it to taste). We hope you and your son enjoy!

      Yes, you could try this in the slow cooker. You’ll still want to do the first couple steps though (sautéing/slightly browning these veggies gives the soup so much more flavors than if you didn’t). Heat oil in a large stockpot over medium-high heat. Add onion and saute for 4 minutes, until soft. Add carrots, celery and garlic and saute for an additional 3 minutes. Transfer the veggies to the crockpot. Add chicken stock, tomatoes, thyme, oregano, rosemary and stir to combine. You’ll need to cook your orzo pasta separately and add at the end (when you add the spinach – see below).

      Stir in the spinach at the very end and season with salt and black pepper to taste (if needed).

  44. Made this for tonight’s tea. It was gorgeous! In the UK we don’t have the tomatoes so I substituted a jar of passata rustica and added a couple of grinds of chilli flakes. I did use a little less orzo and it was perfect. Thanks for the recipe.

  47. I made this soup and my husband loved it.  I thought it had a great taste   I would make this soup again for sure 

  48. Confused, lol. Sounds delicious, but your directions say to use a pot on the stove, but the icon says it is for a slow cooker. Can I make it in the slow cooker without the orzo getting gummy? I would love to make this in the AM and take it to class for lunch (for the bunch, of course) but I would hate to have the class eat gummy pasta.

    • Whoops, that’s a typo. These directions are definitely for the stovetop, not a crock pot. Sorry for the confusion! :)

  49. For some reason my soup turned out more liquidy than yours. Yours looks rather thick in the photos, how do I achieve that?

    • Hi Jordan! We wonder if maybe it just needed to cook a bit longer? One thing you can try though is making a cornstarch slurry (just whisk a few tablespoons of starch into a little of the broth in a separate bowl, then whisk it into the soup pot). We hope this helps!
