The high heat transforms those crisp pieces into deeply golden, caramelized bites with tender, almost buttery centers and perfectly crispy edges. Iโ€™ve served this to more than a few friends who were convinced they โ€œwerenโ€™t cabbage people,โ€ and every single one of them went back for seconds. It’s surprisingly irresistible!

This version keeps things beautifully simple โ€” just olive oil, smoked paprika, garlic, salt and pepper. Roast it under high heat, maybe broil for a minute if you want a little extra char, then finish with a squeeze of lemon or a shower of Parmesan.

Ingredients

  • 1 medium head green cabbage (~2 pounds), cored and chopped into 1ยฝ-inch pieces
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon fine sea salt

Instructions

  1. Heat the oven. Preheat oven to 425ยฐF (220ยฐC).ย 
  2. Season the cabbage. Add the cabbage pieces to the baking sheet. Drizzle with olive oil, sprinkle evenly with salt, pepper, garlic powder, and paprika, and toss until evenly coated. Spread into a single, even layer on a large baking sheet.
  3. Roast. Roast for 20โ€“25 minutes, tossing once at the 15-minute marker, until the cabbage is tender with deeply caramelized, browned edges.
  4. Optional broil. For extra color and crispiness, broil for 1โ€“2 minutes, watching closely.
  5. Finish and serve. Remove from the oven and finish with any desired toppings. Taste and adjust seasoning as needed. Serve warm and enjoy!
