This recipe is everything you love about tomato soup…and more. It overflows with beautiful fresh tomatoes, roasted to sweet perfection. Then some smoked paprika kicks it up a notch. But of course, the bacon pretty much steals the show here. It is subtle, but just rounds everything out with that smoky, savory kick that’s pretty much impossible not to love. Overall, a very simple list of ingredients. But I loved how you could totally savor each one. My idea of a fabulous simple soup!

Roasted Tomato Bacon Soup

Description

Roasted tomato soup meets…BACON!


Ingredients

Scale
  • 2 lbs. roma tomatoes, halved lengthwise
  • 12 Tbsp. vegetable or canola oil
  • 6 strips bacon, chopped
  • 1 small white onion
  • 4 cloves garlic, minced
  • 1.5 cups chicken or vegetable stock
  • 1 Tbsp. smoked paprika
  • 1 bay leaf
  • 2/3 cup heavy cream

Instructions

  1. Preheat oven to 400 degrees F. Cover a baking sheet with aluminum foil or parchment, and lay out tomatoes so that they are in a single layer. Drizzle or mist with 1-2 tablespoons of vegetable or canola oil, and then sprinkle generously with salt and black pepper. Roast until tomatoes are tender, about an hour.
  2. Meanwhile, heat a large stockpot over medium-high heat. Add the bacon and cook, stirring occasionally, until crispy (about 8-10 minutes). Transfer to a heat-proof bowl and set aside, reserving about 2 tablespoons of the fat in the stockpot.
  3. Add onion and saute for about 5 minutes until the onion is soft and translucent. Add the garlic and cook for an additional minute. Then add the chicken or vegetable stock, bay leaf, smoked paprika, roasted tomatoes and cooked bacon and bring to a boil. Reduce heat to medium-low, and simmer for 15-20 minutes to slightly reduce.
  4. If desired, use an immersion blender to puree the soup. Or transfer the soup in small batches into a blender and puree until smooth. (Be very careful pureeing hot liquids!) Transfer the soup back to the stockpot and stir in the heavy cream. Remove from the heat and serve immediately.

  1. Fresh tomato soup is the best. I turned 25lbs of fresh tomatoes into tomato soup this summer. Cant wait for grill cheese and fresh tomato soup on a cold winter evening.
    My basic recipie was onion, garlic, butter, salt, pepper, lots of fresh tomatos. Cooked till soft, put through a food mill and then simmered till I got it the consistancy I wanted. Super easy! Then canned them in pints. I will add milk to the soup when I heat it to make it creamy.

  22. I love Roasted tomato soup- with a touch of cream and homemade crutons on the top.. yum

  23. I don’t really have a recipe, but I love to take grape or cherry tomatoes, cut in half lengthwise, sprinkle with salt, pepper and olive oil and slow bake for several hours. They are so sweet, and wonderful in salads, with sandwiches, or just for a healthy snack.

  24. BLT SOUP
    Ingredients
    5 slices bacon, finely diced, plus crisp crumbles bacon, for garnish
    1/2 cup diced onions
    2 tablespoons butter
    3 cups finely sliced lettuce
    1/2 cup flour
    3 1/2 cups hot chicken broth
    1 cup or can of diced tomatoes (fresh or canned)
    1/8 teaspoon grated fresh nutmeg
    1/8 teaspoon ground red pepper
    1 cup heavy cream
    1/4 cup mayonnaise
    1/4 cup sour cream
    Directions
    In big pot, cook the bacon over medium heat until lightly browned. Add the onions and cook, stirring, until wilted. Add butter and stir until melted. Add the lettuce and saute for 2 minutes. Sprinkle the flour into the pot, then stir it in until well blended. Remove the pot from the heat and add the hot chicken broth, tomatoes, nutmeg and pepper. Heat the soup to boiling, stirring constantly, then reduce and simmer gently for 5 minutes. Add the cream and mix well.

    Mix together the mayonnaise and sour cream. Serve each portion of soup with a dollop of mayonnaise mixture topped with crumbled bacon. Yummy!

  28. Roasted Tomato Soup with Basil

    Ingredients
    •4 lb tomatoes, halved lengthwise
    •6-8 garlic cloves, left unpeeled
    •3 tablespoons olive oil
    •1/2 teaspoon salt
    •1/4 teaspoon black pepper
    •1 medium onion, finely chopped
    •2 teaspoons fresh oregano, minced [use only 1/2 tsp if you used dried]
    •2 tablespoons fresh basil, minced [use only 1 tsp if using dried basil]
    •2 teaspoons sugar
    •2 tablespoons salted butter
    •3 cups chicken stock or low-sodium broth
    •3/4 cup heavy cream

    Directions

    Put oven rack in middle position and preheat to 350°F.

    Arrange tomatoes, cut sides up, in 1 layer in a large shallow baking pan and add garlic to pan. Drizzle tomatoes with oil and sprinkle with salt and pepper. Roast tomatoes and garlic 1 hour, then cool in pan on a rack. Peel garlic.

    Cook onion, oregano, basil, and sugar in butter in a 6- to 8-quart heavy pot over moderately low heat, stirring frequently, until onion is softened, about 5 minutes. Add tomatoes, garlic, and stock and simmer, covered, 20 minutes.

    Purée soup in batches in a blender (use caution when blending hot liquids), then force through a sieve into cleaned pot, discarding solids. Stir in cream and salt and pepper to taste and simmer 2 minutes.

    Divide soup among 8 bowls.

  31. I am just in the process of making the soup and noticed that in the directions it talked about a bay leaf but there isn’t one in the ingredients? Should I add one or not or does it matter?

  32. Do you have any recommendations for substituting heavy cream? I am lactose intolerant… 

    • Hey Julia, you could try blended/pureed silken tofu (equal parts), or Lactaid whole milk. I hope that helps!

  33. Bay leaves are not included in the ingredient list and roasting the tomatoes for 1 hour is not included in the prep time :(

  34. I live alone (with my furbaby) and I was wondering since most of these are 6-8 servings; are all your soups freezable?

  35. I am always looking for ways to use my fresh tomatoes. This recipe is great. Three things really stood out to me: the roasted tomatoes, smoked paprika and of course, bacon!
    I will make this again and quadruple it and freeze some for future meals.
