Sautéed Spinach

Ingredients

  • 2 teaspoons olive oil
  • 2 to 3 small garlic cloves, thinly sliced
  • 5 ounces fresh baby spinach
  • fine sea salt and freshly-ground black pepper
  • lemon wedge (optional)


Instructions

  1. Sauté the garlic. Heat olive oil in a medium sauté pan over medium heat. Add sliced garlic and cook for 1–2 minutes, stirring often, until lightly golden and fragrant.
  2. Wilt the spinach. Add spinach to the pan and toss continuously with tongs until wilted, about 1–2 minutes.
  3. Season and serve. Season with salt and pepper to taste. (I just use a generous pinch of each.) Feel free to add a squeeze of fresh lemon juice, too, if you’d like to brighten up the flavor.
  4. Serve. Serve immediately and enjoy!
