Buzz, buzz, buzz.

I feel like all I’m doing this week is buzzing from one meeting, one appointment, one errand, one grocery store run (ok, make that like four grocery store runs), one lunch date, one happy hour, one sushi night to the next. My calendar alerts are definitely working overtime. That said, I’ll take any excuse to be out soaking up this radiant spring sunshine that’s been warming up Kansas City lately, even if that means an overbooked week of errands. So no complaints here. ?

I’ve got my windows down. I’ve got my new shades on. I’ve got my podcasts a-playin’.

And I’ve got these tasty new energy bites packed along for the rides.

Yep, that’s right, it’s about dang time for a new energy bites recipe here on the blog.

I’ve been experimenting with variations on this classic for years. But ever since I went sugar-free for a few months last year, that recipe actually tastes a little too sweet to me. So I’ve been experimenting with a few variations that are slightly more savory/salty, and I think I finally found a winner with this one.

It still has many of the foundational elements of oatmeal-based energy bites that I love — oats, flax seed, toasted coconut and vanilla. But this time I lowered the amount of honey, swapped PB for almond butter, and added in a ton of my long-time greatest nutty obsession — roasted almonds.  Specifically, Blue Diamond Roasted Salted Almonds.

I love every single almond in the Blue Diamond line, but their roasted salted almonds have been my go-to snack since way back before the brilliance of Wasabi & Soy Sauce and Honey Roasted Chipotle ever came on the scene. And since way before this guy fell head over heels for me — ahem — the Salt ‘n Vinegar almonds in my pantry.

That is to say, Roasted Salted and I go way, way back.

Now, though, I’m pretty sure they have secured an extra-solid spot in my future with their inclusion in this recipe. Their smoky, salty flavor rounds out the sweetness of the almond butter and honey and coconut in these bites absolutely perfectly.

And in the midst of a crazy day buzzing around town, they also provide the perfect pop of protein to keep me energized and going. I feel like this is definitely the energy bites recipe for me in this sweet (although technically less-sugary) season of life. So if you’re looking for a new sweet and salty snack, breakfast, or even a healthier dessert, you’ve gotta try ’em.

Description

This Sweet and Salty Energy Bites recipe is easy to make, packed with tons of protein, and irresistibly delicious!


Ingredients

Scale
  • 1 cup (dry) oatmeal (I used old-fashioned oats)
  • 2/3 cup toasted coconut flakes
  • 2/3 cup roughly-chopped Blue Diamond Roasted Salted Almonds
  • 1/2 cup almond butter
  • 1/2 cup ground flax seed
  • 1/3 cup honey or agave nectar
  • 1 teaspoon vanilla extract, store-bought or homemade
  • 1/4 teaspoon sea salt

Instructions

  1. Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
  2. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
  3. Makes about 20-25 balls.

  3. These energy bites are so similar to my grandma’s traditional delights that she used to prepare whenever we visited her house during vacations. These are really energy store houses. Best thing for kids to munch on.

  15. I haven’t made these but THANK GOODNESS FOR NO DATES. All the energy bites I find have dates – I hate them and can always taste them. Will definitely be trying these sometime.

    • Thanks Kristine! No worries on the coconut — you can add extra oats and a mixture of dried fruit and/or nuts to compensate (cut up dried apricots would be really yummy in these)! :) We hope you enjoy!

  23. I made these based on what I had on hand and they are delicious!

    I used:
    *Quick cook oats
    *peanut butter
    *Roasted my own almonds using coconut oil
    *Ground up my own chia seeds in place of flax

    I doubled the recipe, used my cookie scoop, and it made 31 balls.

    • Hi Michele! We think you could probably do that, we would just cut back on the oats (however much protein powder you use, just exclude the same amount for the oats). We hope that helps!

  27. I just finished mixing the no bake energy balls, they’re in the fridge chilling, and I came across this recipe. I’ve been making the sweet ones for about 2 years now and the whole family loves them, which is a miracle! These sound like they’d be a nice switch up though. I’m going to try it out next week.   32. I like hot snack, so I give this snack chilly sauce, and the taste really great.

    Read a book and eat this snack is perfect combination to fill my spare time.

  35. These were very tasty! Thank you for the recipe. I loved the combination of sweet and salty. I did find them very dry and crumbly when blending all the ingredients (I think because the honey and almond butter that I used were quite thick) so I added 2 tbsp. of coconut oil.

  38. I’ve never had energy bites before. These were good but super sweet (kids loved them). I decided to make a 2nd batch using cashew butter, chopped cashews, unsweetened coconut, craisins & dried blueberries. Then I melted chocolate & put a light coat on them, I made these in bar form. These were suited better for me. I’ll definitely be experimenting with this base recipe. Thanks for the addition to my collection.
