A few years ago, I officially became That Girl Who Doesn’t Buy Salad Dressings.

Well, never say never, make that the girl who very rarely buys salad dressings. Every now and then I cave for a new and interesting bottle at the store. But I hardly ever finish it in time, partly because it’s hard to get through a whole bottle in time (one of the joys of being single!), and partly because I usually just figure out how to make it myself. Plus, making homemade salad dressings is ridiculously quick and easy. And you can have full control over the fat and flavor. And you don’t have to worry about any pesky processed ingredients sneaking their way in there.

So today I thought I’d pop in with a quick post about my favorite homemade salad dressing of the year — this White Balsamic Vinaigrette. It basically tastes just like the traditional balsamic vinaigrette that we all love. But instead of turning your salad all brown, the white balsamic vinaigrette lets the vibrant colors shine through.

If you have been around the blog or my Instagram this past year, you have probably heard me gush about how SaladSavors have become one of my favorite meal shortcuts in the kitchen. They are gourmet salad toppings made simple in these cute little kits. And I am obsessed with them.

All you have to do is grab some lettuce, sprinkle on some toppings, drizzle on some dressing, and within minutes, a gourmet salad is ready to go. No need to buy an entire carton of cheese, or a big bag of dried fruit. Each of the toppings are perfectly portioned for a bag of salad greens. Or if you’re single like me, they work perfectly when spaced out over a handful of individual servings.

SaladSavors come in all sorts of various flavors, including:

  • Zesty Feta (feta cheese, Calamata olives, roasted red peppers)
  • Sharp Asagio (asagio cheese, sun-dried tomatoes, artichoke hearts)

I have to be honest that I didn’t totally understand that white balsamic vinegar even existed until a few years ago. But as soon as I whisked some into a vinaigrette, I knew that it was going to be a game changer with my salads.

You see, I love a good balsamic vinaigrette. But the food stylist in me used to get so annoyed when tossing a beautiful colorful salad with balsamic and watching it all instantly turn…brown. So much brown with traditional balsamic. Sure, it still tastes good. But when I have a particularly colorful salad, I have really enjoyed having the white balsamic option. Or as DeLallo calls it, golden balsamic.

To make the white balsamic vinaigrette, simply combine some good-quality olive oil, white/golden balsamic vinegar, sweetener (I used honey), salt and pepper and Italian seasonings. If you want some extra flavor, you could also add in some minced garlic. Then whisk them all together until combined….

…and drizzle the vinaigrette all over your salad without turning it brown. Brilliant? Brilliant.

  1. So funny, my mom never bought salad dressing and I seriously thank her for it to this day. Also, I am out of white balsamic and have been meaning to buy more – we use it to dress raviolis for the boys because it doesn’t turn the pasta brown like regular balsamic! Thanks for the reminder. :)

  3. I’ve never seen the SaladSavors before but now I must seek them out! I love love LOVE salads and like you, I never buy salad dressing.  Homemade balsamic vinaigrette is what I always make but it is always brown and while it doesn’t bother me often, it’s nice to know there’s a white balsamic vinegar out there for when it does. I’m not sure if I knew that or not. I know it’s silly but I love the heck out of this post!

  6. I am totally obsessed with making my own dressings too. I have a condiment hoarding problem and not having a zillion bottles of salad dressing allows more room for interesting condiments in my fridge door. :)

I just did a refrigerator purge and found a few bottles of salad dressing far older than I care to admit – there’s three salad eaters in this house and even we can’t finish the occasional bottle that we do happen to buy.   29. Ha! My friends were just over the other day and one of them brought a salad but no dressing. She said, “You have dressing, right?” Umm… ha!

    Then they proceeded to make fun of me for only having one bottle of fattoush dressing — no ranch, no thousand island, no french or italian. 

    But I’m with you! Whipping up a dressing is so easy and tastes soooo much better. This one looks like a great one to have in the arsenal!

  31. I bought a bottle of white balsamic vinegar awhile ago but have yet to use it because everything I think of I like being able to see the brown balsamic. I too rarely buy salad dressings so it looks like I have found the key!

  32. They all sound quite delicious, but I am partial to feta and kamalata olives so Zesty would be one I’d try first.

  33. The balsamic vinegrette looks so appetizing, I’m gonna go to the kitchen right now and start prepping this wonderful vitamin bomb! Get everything in a jar and you will have a healthy lunch in the office as well!

    • We’re so glad to hear that Michelle! It should keep in the fridge for two or three weeks, since there’s no onions or garlic or anything like that. :)

  37. This tastes just like the dressing at Maggiano’s, which was exactly what we were going for! We used only two tablespoons of honey, btw.






  38. This dressing is fabulous. The White balsamic is really what gives it a light and fresh taste thank you for a great dressing. I will never use the dark Balsamic Vinaigrette again. I am recommending your sight and this dressing to friends who will love it.

  41. This healthy salad sounds great and I can’t wait to make it tonight. I plan to add some walnuts and toasted pecans, and sprinkle with some sunflower seeds.

    One ingredient I add to my vinaigrette dressing is a teaspoon of Dijon mustard and eliminate the honey. I don’t have white balsamic so will use my white wine vinegar.

  42. This has become our favorite dressing. It is sweet, but not too much. The flavor is delicious!
    I keep it in the refrigerator and it needs run under hot water because it solidifies because of oil. Can it be kept on counter? Thank you!






  43. Modified this recipe with good result. Replaced salt with a half a small shallot cuz I’m avoiding salt. Also added part of a smashed avocado to get the dressing to stay emulsified. Yum!
