Happy Memorial Day Weekend, friends!

I hope that your holiday weekend ahead will be filled with lots of warm summer sunshine, good friends and family nearby, maybe  something delicious on the grill, ice-cold beverages in hand, and hopefully some solid, restful and restorative time off.

As this post goes live, Barclay and I will be tucked away somewhere in the heart of the Greek islands, where we are taking off on a weeklong belated birthday trip. And I absolutely cannot wait.  Greece has been on my bucket list for years and years. So now that we’re living just a short plane ride away, it was at the top of my list for a chill birthday trip this year. They’re made with the most delicious lemony za’atar seasoning, easy to customize with your favorite veggies, and perfect for summertime. I think you will love them.

What Is Za’atar Seasoning?

Za’atar is a classic Middle Eastern seasoning, traditionally made from a combination of sesame seeds, thyme, sumac (plus other herbs and spices, if desired). You can either buy a store-bought blend or make your own homemade, which only takes a few minutes! Here is my favorite recipe for homemade za’atar seasoning.

How To Make Za'atar Chicken and Vegetable Kabobs

Za’atar Chicken and Veggie Kabobs Ingredients:

For this recipe, you will simply need:

  • Chicken: boneless skinless breasts, cut into bite-sized pieces
  • Veggies: I used zucchini and red onion, but any favorite veggies will do
  • Lemon: adds great flavor and also brightens up the look of these kabobs
  • Za’atar Seasoning: either store-bought or homemade
  • Olive Oil: I recommend using traditional olive oil (not extra virgin), or any other high-heat oil
  • Skewers: either metal or wooden (if using wooden, be sure to pre-soak so that they do not burn)

How To Make Za’atar Chicken Kabobs:

Simply…

  1. Prep your chicken and veggies: Chop everything into uniformly-sized pieces and combine in a large mixing bowl.
  2. Toss with oil and seasoning: Give everything a good toss until it’s evenly combined.
  3. Thread chicken and veggies onto skewers: I like to mix the chicken and veggies, or you can do all-chicken and all-veggie skewers, especially if there are some vegetarians in the group who might pass on the chicken.
  4. Roast or grill: Keep a close eye on the chicken, and roast or grill until it is just cooked through.
  5. Serve warm: See serving suggestions below!

What To Serve With Za’atar Chicken and Veggies:

While this recipe is plenty flavorful on its own, I absolutely love serving it with this tahini dressing, whose cool and creamy flavors pair perfectly with the za’atar seasoning. Highly recommend. This recipe would also pair deliciously with:

Ingredients

Scale
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchini, cut into bite-sized pieces
  • 1 large red onion, cut into bite-sized pieces
  • 1 large lemon, quartered and thinly-sliced
  • 2 tablespoons olive oil
  • 3 tablespoons za’atar seasoning

Instructions

  1. Heat oven to 400°F.  Or heat a grill to medium-high.
  2. Combine chicken, zucchini, red onion and lemon in a large mixing bowl.  Drizzle evenly with the olive oil, then toss until combined.  Sprinkle the za’atar seasoning evenly over the mixture, then toss until combined.
  3. Thread the chicken, zucchini, onion, and lemon onto skewers.
  4. Bake in the oven or grill for 4-5 minutes per side, or until the chicken is just cooked through and no longer pink on the inside.  Serve immediately, drizzled with my favorite creamy tahini dressing if you would like.

  3. I received a large bag of za’atar from a friend and might actually now get through it! I added yellow squash and mushrooms just because I had lots of those on hand. This was so yummy and easy to grill, I’ll definitely make again.






  4. Great recipe. I cooked it as a ‘sheet pan’ dinner because was running short on time. I used preserved lemon and served on mini wraps with Greek yoghurt and crumbled feta. A hit with the family, thank you






  5. Made these kabobs last night. Added sweet red peppers for more colour. Not recommended to try new recipes with guest but followed your directions and it was a hit. Served with your Fattoush Salad which was an even bigger hit. Added Pomegranate syrup to the dressing for a bit of sweetness. This is my first review on any recipes!

  8. OMG!!! These were next level. Used the spice blend use suggested and the ratio. I used it in a za’atar chicken plate with homemade hummus, cucumber salad & warm pita. A squeeze of lemon just enhanced the dish so much!! Thank you!!!! :)
