- 1 medium head green cabbage (~2 pounds), cored and chopped into 1½-inch pieces
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon fine sea salt
- 1 teaspoon garlic powder
- 1/2 teaspoon freshly cracked black pepper
- optional toppings: fresh lemon juice, grated Parmesan
Instructions
- Heat the oven. Preheat oven to 425°F (220°C).
- Season the cabbage. Add the cabbage pieces to the baking sheet. Drizzle with olive oil, sprinkle evenly with salt, pepper, garlic powder, and paprika, and toss until evenly coated. Spread into a single, even layer on a large baking sheet.
- Roast. Roast for 20–25 minutes, tossing once at the 15-minute marker, until the cabbage is tender with deeply caramelized, browned edges.
- Optional broil. For extra color and crispiness, broil for 1–2 minutes, watching closely.
- Finish and serve. Remove from the oven and finish with any desired toppings. Taste and adjust seasoning as needed. Serve warm and enjoy!
