This cucumber mint gin fizz is everything I want in a refreshing drink this time of year. It comes together in just a few minutes with fresh cucumber, mint, lime juice, and gin, all blended together and topped with a splash of fizzy tonic water — and it couldn’t be more delicious. I love straining and serving it over ice with a few extra slices of cucumber and mint for garnish, but it’s just as tasty straight from the blender.
Feel free to add some jalapeño if you’d like to give it a kick, play around with different herbs, or swap in vodka if you prefer. This recipe is endlessly versatile and always a crowd-pleaser. Cheers!

Taste before straining: After blending, give the drink a quick taste to see if you’d like to adjust the amount of sweetener (or any of the other ingredients). If the texture is smooth enough for you, you can also skip straining the cocktail and keep the extra flavor and fiber.
Chill your ingredients ahead of time: Cold gin, lime juice, cucumber and tonic will help keep the drink cold and refreshing without needing to dilute it too much with ice.

Ingredients

2 ounces gin
1 ounce lime juice
1/2 ounce simple syrup
6 mint leaves
3 cucumber slices
ice
tonic water
Instructions
Blend.Combine the gin, lime juice, simple syrup, mint and cucumber in a blender. Blend for 30 seconds or until completely smooth.
Strain (optional).Strain the mixture into a cocktail glass through a fine mesh strainer if you’d like to remove the pulp.
Finish.Fill the glass with ice, then top with a splash of tonic water.
Serve.Serve immediately, garnished with extra mint, cucumber and/or lime slices, and enjoy!
