Description

This easy Fruit Pizza recipe is made with my favorite brown sugar cookie crust, spread with a dreamy cream cheese frosting, and then topped with your favorite combination of fruit!

Brown Sugar Cookie Crust:

  • 1 1/2 cups all-purpose flour (plus extra for rolling)
  • 1 teaspoon baking powder
  • 1/4 teaspoon  salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Cream Cheese Frosting:

  • 1 (8 ounce) package low-fat cream cheese
  • 23 tablespoons maple syrup or honey (or 1 cup powdered sugar)
  • 1 teaspoon vanilla extract
  • pinch of fine sea salt

Toppings:

  • fresh strawberries (blueberries, raspberries, blackberries, or any other fruit that sounds good!)
  • optional fresh honey, for drizzling

Instructions

  1. Heat oven to 350°F.  Grease either a quarter sheet pan, a 9 x 13-inch baking dish, or a 12-inch round pizza pan with cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder and salt; set aside.
  3. In a large mixing bowl either with a stand mixer (with the blade attachment) or hand mixer, beat the butter and sugar together on medium-speed until light and fluffy, about 2 minutes.  Add the egg, vanilla and almond extract.  Beat on medium speed until completely combined, scraping down the sides partway through if needed.  Add in the dry ingredients, and beat on low speed until just combined.  (Avoid over-mixing the dough.)
  4. Press the dough evenly into the prepared pan/dish*.  Use a fork to poke a few holes in the dough, to prevent it from bubbling up.  Bake for 15-18 minutes, or until the dough is lightly golden.  Transfer to a wire baking rack to let cool for 20 minutes.
  5. Meanwhile, whisk together the frosting ingredients until combined.
  6. Spread the frosting out evenly on the baked cookie crust.  Sprinkle with your favorite fruit, and drizzle with a bit of honey if desired.  Slice, serve and enjoy!

Notes

*Pressing The Dough: It might help to chill the dough for 10 minutes before pressing it into the pan.  I also wet my fingers periodically with water to keep the dough from sticking to my fingers.
