Description

This Japanese-inspired carrot ginger dressing is made with a vibrant mix of flavors and used as a salad dressing, marinade, dipping sauce and more.


Ingredients

Scale
  • 2 large carrots (8 ounces), roughly-chopped
  • 1/3 cup avocado oil (or any mild-flavored oil)
  • 1/4 cup rice vinegar
  • 2 tablespoons finely-chopped fresh ginger
  • 2 tablespoons honey
  • 1 tablespoon white miso
  • 1 teaspoon toasted sesame oil
  • fine sea salt and black pepper, to taste

Instructions

  1. Blend. Add all ingredients to a blender and pulse until completely smooth. If you would like a thinner dressing, blend in 1/4 of water until smooth.
  2. Season. Taste and season with salt and pepper as needed. (I add about 1/4 teaspoon of each, but the saltiness will also depend on your miso.)
  3. Serve. Serve immediately or store in a sealed container for up to 1 week.
