
Our Whole Family LOVES These Muffins

I’ve mentioned many times that our kids have been obsessed with these healthy banana muffins for years. (We all have the recipe memorized.) But recently, I decided to try making the recipe with a chocolate spin and — probably no surprise — they’re even more popular in our house now than they’ve turned out to be even more popular than the originals. 💛
They’re still naturally gluten-free and dairy-free, and sweetened mostly with ripe bananas plus a hint of maple syrup. And just like the originals, they couldn’t be easier to make. All you need is a blender (or mixing bowl), some ripe bananas, and about 10 minutes of prep time. Then after a quick bake in the oven, you’ll have a batch of soft, chocolatey, feel-good muffins ready to go — perfect for breakfast, snacks, or anytime a chocolate craving hits.

Recipe Tips
Before you dive in, here are a few little tips that make these muffins extra reliable and delicious every time:
- Use very ripe bananas. The darker and spottier, the better. Ripe bananas add the best natural sweetness and moisture to these muffins.
- Don’t overblend the batter. Blend just until smooth — over-mixing can make the muffins a bit dense.
- Let the batter rest for a minute or two. Oat flour benefits from a short rest to hydrate, which improves texture.
- Use a cookie scoop for easy portioning. I always use a cookie scoop to transfer the batter easily (and evenly) into the muffin cups. Love this set!
- Check early for doneness. Ovens vary, so start checking around 15 minutes to avoid overbaking.

Recipe Variations
One of my favorite things about this recipe is how easy it is to tweak depending on what you have on hand or what you’re craving. Feel free to:
- Add chopped walnuts or pecans for a little crunch.
- Stir in a spoonful of peanut butter or almond butter for extra protein.
- Add a pinch of cinnamon or espresso powder to deepen the chocolate flavor.
- Make them sweeter by sprinkling coarse turbinado sugar on top.
- Swap oat milk for regular milk or almond milk depending on what you have in the fridge.
- Top with a sprinkle of flaky sea salt after baking for that sweet-salty finish.

Ingredients
- 1 2/3 cups (161g) oat flour
- 1/4 cup (21g) unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1 large egg + 1 egg yolk
- 3/4 cup plain oat milk
- 3/4 cup tightly-packed mashed ripe bananas
- 1/3 cup maple syrup
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1/4 cup mini semisweet chocolate chips
Instructions
- Preheat the oven to 375°F. Line a 12-cup muffin pan with liners or lightly grease.
- Blend the dry ingredients. Add the oat flour, cocoa powder, baking soda, and salt to a blender. Blend briefly until evenly combined.
- Add the wet ingredients. Add the egg, egg yolk, oat milk, mashed bananas, maple syrup, melted coconut oil, and vanilla extract. Blend until smooth, stopping to scrape down the sides as needed. Avoid overmixing.
- Portion. Divide the batter evenly among the prepared muffin cups.
- Top with chocolate. Sprinkle the mini semisweet chocolate chips evenly over the tops of the muffins.
- Bake. Bake for 15–18 minutes, until a toothpick inserted in the center comes out mostly clean.
- Cool. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool to your liking. Serve and enjoy!
