Description

An amazing spiced gingerbread recipe made with greek yogurt!


Ingredients

For The Gingerbread:

  • 1 1/2 cups all-purpose flour
  • 2 tsp. dried ginger
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground cloves
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/8 tsp. baking soda
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 1/4 cup dark brown sugar
  • 1/4 cup molasses
  • 3 eggs
  • 1 tsp. vanilla extract, store-bought or homemade
  • 6 ounces 2% Greek Yogurt (plain or vanilla)

For The Greek Yogurt Topping:

  • 1/2 cup Greek yogurt (plain or vanilla)
  • 2 tsp. powdered sugar
  • 1 tsp. milk
  • 1 tsp. vanilla extract
  • Pinch of ground ginger

Instructions

  1. Preheat oven to 325 degrees. Grease one 9×5 loaf pan and set aside.
  2. In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
  3. In the bowl of a stand mixer, cream the butter. Gradually add the sugar and cream until light and fluffy, about 7 minutes. Add the molasses and mix until combined. Add the eggs, one at a time, mixing each until fully incorporated and then mix in the vanilla.
  4. Slowly add the dry ingredients, alternating with the Greek yogurt, to the creamed butter and sugars and mix just until incorporated. Add the vanilla extract and beat on low just until blended.
  5. Pour the batter into the prepared pan and bake for 45-50 minutes until the edges begin to brown and a toothpick inserted in the center of the loaf comes out clean. Cool in the loaf pan for 10-15 minutes before transferring to a wire rack.
  6. For the topping: mix the Greek yogurt, powdered sugar, milk and vanilla in a small bowl until combined. Serve with the gingerbread.
