I was once a proud Girl Scout. For…um…two weeks.

Yes, it’s quite the tragedy. I was super-excited. Had my little Brownie outfit. Went to the first two meetings. Picked up my cheese and sausage order forms and skipped around the neighborhood using my best sales and persuasion strategies (grew up with a dad in marketing) to sell as much merch as possible. But then…a sad day arrived. :(  For reasons still unknown to me, our troop leaders spontaneously backed out and apparently couldn’t find replacements. So this poor little Brownie was left to make another loop around the neighborhood, apologizing and informing everyone that the delicious cheese and sausage would no longer be arriving.

Aw, I feel sad for little 7-year-old me just writing this! Ha…thankfully, I think I turned out ok. :) And managed to grow up still loving Girl Scout merch — especially cookies!!!

So for my next Christmas cookie (although they’re obviously fantastic year-round), I present to you my take on “tagalongs”. Or as I used to know them…”peanut butter patties”. Oh my goodness – I love these little guys. And especially love the idea of using white instead of dark, milk or semisweet chocolate. (Although you could easily substitute any of those!)  For me, the flavors are just perfectly complimentary.

So grab these three (yes, just three!) ingredients, and have fun making these fun no-bake cookies!

Description

You’ll love this Chocolate-Covered Ritz & Peanut Butter Cookies Recipe! It will almost remind you of Girl Scout cookies!


Ingredients

  • Ritz crackers (or other favorite buttery crackers)
  • vanilla almond bark or white-chocolate chips
  • peanut butter
  • Optional: sprinkles for decorating

Instructions

  1. Begin making the “sandwiches” by spreading a small dab of peanut butter atop the flat side of a cracker, and then attaching the flat side of another cracker on top. Repeat with the remainder of the crackers and peanut butter.
  2. Then melt your vanilla almond bark (or white chocolate chips) in the microwave or a double boiler. If the chocolate is too thick, feel free to add in a few teaspoons of shortening to thin it out.
  3. Then carefully drop each “sandwich” in the chocolate and submerge so that it’s fully-coated. Remove with a fork and set on wax paper, parchment paper, aluminum foil, or a Silpat to dry. Feel free to decorate with sprinkles or drizzle with extra chocolate for decor! (I used clear sugar sprinkles above.)

  2. My sister used to bring these home at Christmas time. She dipped them in semi-sweet chocolate chips, and we all adored them. They are tasty!!

  3. My grandmother made cookies like these a few years ago, and they were phenomenal! I have made them with graham crackers, too… I think I might have to make some this week for one of the remaining Christmas parties I’m attending!

  4. My mom and I have been making these cookies since I can remember! We also use them at christmas time and add sprinkles, confetti, etc to make them more “holiday” like… now w/ the snowflake and christmas tree ritz it’s easy to make the holiday cookies… I know keep a batch in my freezer all year round!
    – this year I made some w/ extra semi sweet chocolate chips melted… they have a slightly more bitter taste and also it seems the chocolate chips never reall “harden” as there is a wet feeling to them…. probably just more oil in the chips than the almond bark.

  7. I tried these and the crackers weren’t crunchy at all – almost soggy tasting. Is that that how they’re supposed to be? 

    • We’re so sorry to hear that, Emily! :( These definitely shouldn’t be soggy. We wonder if your chocolate was too thin? Also, what kind of peanut butter did you use? If you used an organic peanut butter, those tend to be thinner and can be quite runny. We wonder if that could have made them a bit soggy?

  8. Faster to use the Ritz Bits PB crackers and just dip in chocolate. We use Lance Gluten Free mini PB crackers.

  11. My Mom taught me an even easier recipe. Just use Ritz Bits with Peanut Butter. They are just bite size a less steps. Mmmmm good!!

My mom and dad’s birthday is January 19th yes, both parents have the same birthday ? my mother loves these so for her birthday I’m making them and purchased a 40 year I’ll crazy crayola crayons tin in mint condition to put them in .. She collects antiques and when I was a kid coloring was one of my favorite things to do and she kept me stocked up with Crayola crayons !!! I think she’ll love it especially the little ritz cookies I remember her making because she’s crave them !! Lol, I’m using this recipe because it sounds like the one she used to make !!! I have a question though, is almond bark or white chocolate chips better for these ?? I want them to be perfect !! Thank you for the recipe, sounds perfect to me !! ? I was never a Girl Scout, your story put tears in my eyes, We didn’t have Girl Scouts where I live but I would’ve loved to have been one !!     More like candy !

    I experienced the same Brownie problem.

    There wasnt any meat involved.

    But I was the treasurer, and the ex-leader said to keep the money.

    So I was suddenly “rich”, so I went to the nearest place that sold candy bars, and bought a couple.

    I was still rich after that, so I learned to save.

    But I sure was bummed out over no more Brownie fun.

    I wish I had gone to the leader and told her how much I learned from her.

    She tried ! Maybe I can try, too.
