Oh my goodness, it feels so good to be home.

My time in Europe these past few weeks was such a gift, and filled to the brim with so many wonderful memories with friends. But between the six-course meals each night on the Mediterranean cruise, paella in Spain, and pub food galore with friends all over England, I think it’s safe to say that I probably ate more carbs (and specifically, potatoes!) in the past month than ever before!

So upon returning home, my friend Sarah and I thought it would be fun to try going “raw” for a week. Nothing cooked, no caffeine, no alcohol — just straight raw ingredients, which mostly includes fresh produce and nuts. I will post a summary of how it went at the end of this week, and then I’m also planning to share some of the recipes next week.

However, the first “detox” smoothie that I made yesterday was too good not to share right away! I love green smoothies, but this one may be one of my new favorites. It is sweet and simple, but packed with all sorts of healthy goodness that I loved. No arm-twisting necessary to enjoy this green smoothie for a meal!

Green Detox Smoothie

Description

A delicious and healthy green โ€œdetoxโ€ smoothie.


Ingredients

Scale
  • 3 cups frozen diced pineapple
  • 3 cups fresh baby spinach
  • 1 cup frozen diced banana
  • 1 celery rib (optional)
  • 1 Tbsp. grated fresh ginger (start with less and add more if desired)
  • 1 Tbsp.ย chia seeds
  • juice from half a lime


Instructions

  1. Combine all ingredients in a blenderย and pulse until smooth. ย Add a little water or juice if needed to help the blender blend.

    I make this smoothie all the time, tho I add a cup of spinach and about 3 celery sticks; ย whole. It’s perfect for breakfast; and yes a meal replacement. 1tbs of Chai seeds equals 1 egg so the equivalent to what you’d eat for breakfast measures out, ย with tons of minerals and vitamins to boot! My son loves it, a favorite in this house! ย

    This recipe is for just one person? ย At what time do you take it? ย Breakfast, ย lunch or at night? ย Does it replace one meal? ย How many days do you take it to show results? Thanks for the answers.ย

      Hi Maria, this recipe makes about 4-5 cups, so about two good-sized servings. It’s not really meant to be a meal replacer โ€”ย we like it for breakfast some mornings (or with breakfast, because it doesn’t have much protein), or as a healthy snack. We hope you enjoy!
