Loving this Instagram account so much. Just ordered a letter board for myself this month too!

Wanting to know all of your best recommendations for what to cook with my new Instant-Pot (<- on sale again this week on Amazon!). I’m already feeling like this thing is going to be a life-changer.

Listening to Christmas music non-stop on Spotify. Like, literally. This playlist, this album, and this band (with its cute guitar player?) are my faves this year.

Feeling all the feels about my having my very first “real” Christmas tree this year! I’ve managed to water it every day and keep it alive for three weeks now (shocker) and am feeling like such an adult and love it so much. ♥  Also loving this cute little choose-your-home-on-the-map ornament that I picked up at Target this year, and this candle which makes my entire loft smell even more yummy and Christmas-tree-y.

Recommending Trevor Noah’s new book to everyone I know. Hands down one of the best, most fascinating memoirs I’ve read in awhile.

Wearing my winter uniform just about every day now — ultra-soft tunic + leggings + booties. Because…comfort.

Craving soondubu jjigae, the most delicious soup I fell in love with during my trip to Korea last month. Can’t get enough of it, and feeling like I need to learn how to make it asap.

Feeling sooooo much less anxious about my inbox after giving it a thorough deep clean with Unroll.me. Have you guys used this before? (It’s free!)  I do a thorough sweep with it about once a year, and am amazed at how much stuff accumulates in that time. (And how free I feel afterwards!!)

Looking forward to having all of my friends over tomorrow night for a cozy Christmas party. And I’ve planned a 100% make-ahead menu (putting my three slow cookers to work!) so that I can spend 100% of that time with my people instead of buzzing around the kitchen cooking and getting everything ready. My kind of entertaining. Can’t wait.

I have a serious addiction to cooking in mine, so much so that I set up a private facebook group to share recipes with friends as the original instant pot group is too big!

Wish I could help with the Instant Pot – but I don’t like and won’t go near a pressure cooker.  I’m glad you mentioned Trevor Noah’s book.  We watch him regularly, and love him.  Given how thoughtful a person he is, I’m certain that his book would be excellent.  Hope your Christmas party is a lot of fun.

  5. I’m curious about the insta pot. I’ve been using a pressure cooker for years (the person who commented below about not going near them should really take another look. They have changed so much over the years! They are nothing like the old pressure cookers or moms and grandmas used. I have lots of recipes that I use in pressure cooker. Looking forward to your comments on the insta pot

  7. Run, don’t walk to Serious Eats and grab these three stupidly easy pressure cooker recipes from Kenji Lopez-Alt:

    Tomato Sauce – https://www.seriouseats.com/recipes/2016/10/pressure-cooker-tomato-sauce.html. Made it tonight, so good. My tomatoes were a bit too acidic for my taste, so I added some more butter and some brown sugar, plus some tomato paste to thicken it slightly. I made it around noon and held it on Keep Warm until dinner time. Lovely. 

    Chicken Chili Verde – https://www.seriouseats.com/recipes/2015/04/pressure-cooker-fast-and-easy-chicken-chile-verde-recipe.html. Made this last night, tossing some sauce into the chicken, then making pollo verde tacos. The rest of the sauce is in the fridge for use in chicken enchiladas verde. I made a half recipe, using a frozen chicken breast, cut in half. Cook for 15 minutes, wait 5 minutes, then release pressure. Add some fresh jalapeño and lime to the blender to brighten it up.

    Split Pea with Ham Soup – https://www.seriouseats.com/recipes/2016/10/30-minute-pressure-cooker-split-pea-soup-recipe.html. Perfect as written (I used half broth, half water and added a few drops liquid smoke), trust the quick release method. This is genius. 

    And Chile Colorado Smothered Burritos from Barbara Schieving: https://www.pressurecookingtoday.com/easy-pressure-cooker-chile-colorado-smothered-burritos/. I made a quick enchilada sauce in the IP, then added the beef. We didn’t bother with burritos, we ate the stew. Tasty!

    I only cook for two and have no trouble cutting many recipes in half or smaller. I can’t believe how often I use it. Enjoy your Instant Pot, and then post some tasty recipes for us that use it!

    I have the same tunic and leggings too! Soondubu jjigae isn’t too difficult to make at home as long as you can get your hands on the right ingredients. You can find lots of how-to videos on YouTube!
