
At my most recent book club, my friend Kerry served a delicious tomato basil bruschetta. And I have been craving all things caprese ever since. So this weekend, I gathered some fresh ingredients from the market and decided to create a new appetizer — Caprese Phyllo Cups!
These simple little phyllo cup appetizer could not be easier. All you need are five ingredients — any kind of tomatoes, mozzarella, fresh basil, balsamic vinegar, and of course, my favorite little phyllo cups (or you can make baked cups with wonton wrappers). And less than ten minutes later, you can have an entire batch ready to serve and enjoy. So quick and easy. And so fresh and delicious!
I’m already looking forward to making these again. I have a little hunch that may happen a lot this summer. ;)

5-Ingredient Caprese Phyllo Cups
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 15 cups 1x
Description
A quick and easy appetizer for caprese lovers!
Ingredients
- 1/2 cup balsamic vinegar
- 1 (15-count) package mini phyllo cups
- 15 grape or cherry tomatoes, halved
- 4 ounces fresh mozzarella, diced or torn into small pieces
- 4 large fresh basil leaves, torn into small pieces
Instructions
- Bring balsamic vinegar to a boil in a small saucepan over medium-high heat. Reduce heat to medium-low and simmer for about 3-5 minutes, or until reduced by half. Remove from heat.
- Portion the tomatoes, mozzarella and fresh basil between the phyllo cups. Drizzle with the reduced balsamic vinegar. Serve immediately.










Friend of mine made these for a baby shower a few weeks ago. Made 30 as pictured above. Then swapped out the tomatoes and replaced them with cut up strawberries and made 30 of those. then she made 30 adding shredded chicen to the original recipe.
Not only where they a huge hit everyone had to have the recipes before they left and no one could believe how easy and siimple they where to make and perfectly delicious they tastd
Can you make these in the morning and serve just before dinner?
Do you use the phyllo right out of the package or do you crisp them up in the oven first then let cool?
These were amazing! Delicious and very light! Party favorite and nice departure from the more meat laden dishes.
Where do you find the phyllo cups? I’ve never seen them

The only ones I see in the freezer section are not pre-baked .
So,just bake per instructions and then fill them with ingredients and serve?

Now that it’s winter, I don’t have access to fresh basil. Is there anything I can substitute? Pesto? Dried basil?

Where can you get the mini phyllo cups?

You recipe says to serve immediately..so, if these were to sit, sort of buffet style at a party, would they not be very good? Trying to plan a holiday party. :)
I think they would hold up for at least 2 hours. It depends how juicy your ingredients are, but they should hold up awhile! :)
