Description

This frozen coconut margarita recipe is refreshing, sweet, and perfectly lime-and-coconut-y.

Ingredients

Scale

Coconut Margarita Ingredients:

  • 1/2 cup tequila
  • 1/3 cup freshly-squeezed lime juice
  • 3 tablespoons freshly-squeezed orange juice
  • 1-2 tablespoons simple syrup, if needed
  • coconut ice cubes

Optional Rim Garnish:

  • lime wedges
  • sweetened shredded coconut
  • coarse rim salt

Instructions

To Make The Coconut Ice Cubes:

  1. Whisk together the coconut water and cream of coconut in a mixing bowl until combined. Pour the mixture into ice cube trays, then freeze for at least 12 hours, or until frozen. (Cream of coconut does not always freeze completely, so if yours are not 100% solid, that’s ok.) Keep frozen until ready to use.
  2. !To Rim The Glasses:
  3. Run a lime wedge around the top of each glass until it the top 1/4-inch or so is moistened. Dip the glass in a bowl that has been filled with either shredded coconut and/or coarse rim salt. Chill the glasses in the freezer for at least 5 minutes before filling with the margarita mixture.
  4. If your coconut is not sticking, you may need to pulse it a few times in a food processor until it is the consistency of coarse salt.
  5. !To Make The Coconut Margaritas:
  6. Add all ingredients (including the coconut ice cubes) to a blender and pulse until combined. Taste the mixture, and add simple syrup to sweeten if needed. You can also add extra ice cubes (either regular, or more coconut ice cubes) to thicken the consistency, if needed
  7. Pour into prepared glasses and serve immediately, garnished with an extra lime wedge on top if desired.

  21. I rode the mamba once when it first opened and haven’t been on it since! I was terrified! Way to go girl!

  22. I can roll with this. I’m a piña colada addict, but I can see tequila being a pal of my beloved coconut drank!

I love coasters!!! I’m so glad you had fun! That one looks pretty intense!

  23. Riding a roller coaster is on my 40-by-40 list! Still trying to get the courage. :) Love the #CrackLifeOpen idea – will check it out.

  24. I’m so jealous you guys got to coaster together, and I can totally see Kate researching the stats. Ha! Your margaritas, oh my word! I LOVE coconut. This is one marg I’d be thrilled to throw down. What a cool way to use coconut water, it’s so much more than just a sipper.

  25. Oh wow. Those look delicious! So cool and fresh. And the coconut water keeps me hydrated, right? So I can have another? :)

  26. Way to go!!! I haven’t been on a roller coaster since I was 8, and I plan to keep it that way! I’ll be the parent who takes pictures from the ground :-) Such a unique idea for coconut water! Delicious!

  27. Ahh!! So much fun!

    And coconut margs?!? Crazy awesome!

  28. That looks so good! Perfect for a girls night :)

  29. Ha, I’m terrified of roller coasters too (it’s not natural!) so I’m super impressed that you guys tackled your fears head on.

  30. Obviously you didn’t inherit the “white knuckle” gene from your mother. I must have done something right. …Co Co Nut Cheers!

  31. I’m not much of a margarita drinker, but this sounds absolutely wonderful. A well-deserved treat for having the courage (or foolhardiness) to ride roller coasters. I do admire you for riding big roller coasters. They terrify me, and I seem to be constitutionally incapable of having fun while in a state of terror. I’m also happy to see that you are following through with challenging yourself. That should help make unexpected challenges easier.

  32. Last year was my 13 year old brother’s first time on a roller coaster and he didn’t want to go by himself so I ended up having to go because neither my mom or my sister wanted to. That was my first time in 10 years too. Ahhh. I remember back in my teens I had a blast and went on the same coasters multiple times but this time once on each kind was enough but my brother went on multiple times on his own afterwards. I have passed on the torch to the next generation.

This margarita looks and sounds delicious. I love coconut and margaritas.

  33. This is awesome! I feel inspired to go tackle something scary right now! But first? A margarita.

  34. Oh yes, these are fantastic! And congrats to you for conquering your fear, you looked like you had a blast!!

  35. I never would have thought to make a margarita like this before! I must try the recipe, it looks so creamy and delicious!

  36. I’d even go on a spinny ride if I got this marg at the end of it

  37. Oh man! I love this! Such perfect flavors!

  38. i love the idea of a coconut margarita! i wish I had all the ingredients to make this! must head to store. i also wish there was a roller coaster near me but i’d have to travel at least 2000 miles!

  39. This looks so refreshing! I’ve been on a coconut kick lately and I will have to try this next weekend when the gang comes over!

  40. It seems a very good idea and I will try it asap, thanks :)

  41. That coconut margarita sounds yummmy!   Will have to give it a try.  To cut out a step. ..could you add all ingredients together and put in freezer?  Since the tequila will keep it from freezing..kinda like an adult slushee???  Either way…wish I had one now! !!

  42. These sound delish!! In the story you mention you used coconut milk with the coconut water, but the directions say cream of coconut? Did you use the sweetened cream of coconut or the canned coconut milk? Can’t wait to try these out.

  43. This sounds so good! I love coconut so I’m all over this!
