Sometimes I make salsa based on a craving for a spicy kick. Sometimes I just want to go fresh and light. Sometimes I want sweet and fruity. Sometimes roasted and caramelized.
And sometimes….I just want some fresh color!!! :)
Yes, I admit my method for making this one was literally — to see how many colors I can fit into one recipe! With so much beautiful, ripe, colorful produce to choose from this time of year, it definitely was not hard. And thankfully — since all of these ingredients go perfectly in salsa anyway, it turned out to be incredibly delicious! Definitely a yummy take on the lighter, fresher, chunkier side of salsa-making.
My kids were just telling me about “eating the rainbow” and it definitely looks like you’re eating a rainbow here. I like the addition of the avocado too.
Gorgeous colours – I love your photos and am delighted to have found your blog. In fact, I chose the purple salsa shot as my ‘Weekly Wow!’ for the week of August 4th. Please check it out and let me know if you have any objections. You’re also now eligible to use the ‘Weekly Wow!’ badge on your blog if you so choose. You’ll find it on my ‘Blogga Bling’ page. Congratulations!
Made it 4 hours ahead–was afraid I’d forget the avocado at the last minute before serving, so I went ahead and added it. Still fresh and green after 4 hours–guess the lime juice provided the preservation! Thanks–it is great!
whoah this blog is fantastic i love reading your articles. Keep up the good work! You know, many people are hunting around for this information, you could help them greatly.
