For the conclusion to “Zucchini Week”, thought it was only appropriate to do a giveaway of the tool I used about a zillion times this week — a grater!

Although this isn’t your typical grater. I don’t know about any of you, but I’ve never been a huge fan of vertical box graters. The angle never feels that natural or comfortable, and the grater occasionally slips out of place. So for a giveaway, thought it would be fun to offer this 6-piece Progressive International grater. As you can see, it sits flat, and has four interchangeable graters you can pop in and out. Simple, and quite functional (especially for grating zucchini!!!).

  17. The Chocolate zucchini cake, hands down. But an old stand-by is zucchini bread. My mom made it from a recipe on an old Parkay container (long lost) when I was a kid and it was love at first sight.

  30. I recently made some zucchini enchiladas. They were great! It’s a good way to have some Mexican style food when you’re vegetarian and it gets away from the typical spinach and cheese!

  44. Tried the zucchini parmesan this weekend! Loved it! It was a perfect compliment to pork tenderloin cuts that were done on the grill. We missed planting a garden this year as my husband was just coming home from Afghanistan in July….I KNEW I’d never plant and keep up with a garden on my own, and I knew I wouldn’t be worried about all the vegetables coming on when he got home! ;) Can’t wait to plant again next year…thanks for all the ideas of how to use up that zucchini!!
