That’s right. Without fail, requests for slow cooker recipes and chicken recipes seem to far outweigh all other topics in surveys and your emails. So today I’m doing a two-for-one and also introducing a healthier new take on a classic — Slow Cooker Teriyaki Chicken!

This version includes all of the delicious sweet and savory teriyaki flavors you love. But this easy homemade teriyaki sauce is naturally sweetened with honey instead of refined sugar. And since your slow cooker is going to do most of the work for you, there is very minimal prep time required. I think we can call that a win-win.

Here’s how to make it happen.

First we begin by making the teriyaki sauce base. Simply whisk together the ingredients.

Then lay your chicken breasts out in a single layer in your slow cooker and pour the sauce over them. Cover and cook on high for about 4-5 hours, or until the chicken basically falls apart when shredded with a fork. Get ready, because your home is going to smell a-ma-zing.

Once the chicken is cooked, remove it with a slotted spoon and shred it on a separate plate or in a bowl.

Then transfer the remaining teriyaki sauce to a small saucepan, and whisk a cornstarch slurry. Bring it to a boil and let it thicken. Then pour the sauce on top of your shredded chicken.

Description

This Slow Cooker Teriyaki Chicken recipe is simple to make, full of great flavor, and made with natural sweeteners.


Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 2 cloves garlic, minced
  • 1/2 cup chopped white onion
  • 1/2 cup honey
  • 1/2 cup soy sauce (use low-sodium if desired)
  • 1/4 cup rice wine vinegar
  • 1 Tbsp. chopped fresh ginger
  • 1/8 tsp. freshly ground black pepper
  • 1/4 cup cold water
  • 3 Tbsp. cornstarch
  • (optional toppings: sliced scallions and toasted sesame seeds)

Instructions

  1. Add the chicken breasts to the bottom of your slow cooker in a single layer.
  2. In a separate bowl, whisk together the garlic, onion, honey, soy sauce, rice wine vinegar, ginger, and black pepper until combined. Pour the mixture on top of the chicken breasts. Cover slow cooker, and cook on high for 4-5 hours, or until the chicken is cooked through and shreds easily with a fork. Remove the chicken with a slotted spoon to a separate bowl and shred it using two forks. Transfer the remaining teriyaki sauce from the slow cooker to a medium saucepan.
  3. Meanwhile in a separate bowl, whisk together the cold water and cornstarch until the cornstarch is dissolved and no longer lumpy. Pour the cornstarch slurry into the teriyaki sauce mixture, and whisk to combine. Bring the mixture to a boil over medium-high heat, and let it boil for about 1-2 minutes or until thickened. Remove from heat, and pour the sauce on top of the shredded chicken. Toss to combine.
  4. Serve topped with scallions (green onions) and toasted sesame seeds if desired.

My Son made this recipe yesterday and wanted to know if anyone could sign up and I said “sure” so he is all excited to learn new recipes to make when he is home. He is a single Dad so he does all the cooking at his house. We live about 300 miles from each other so he can’t come over and borrow my recipes. I have sent him a few magazines and a cookbook now but he really liked the Teriyaki Chicken in MY old crockpot that he seemed to need more than me years ago. Maybe I will win this one!! YEAH!!!

  20. One of my favorite crock pot recipes is the Campbell’s cream of mushroom with pork chops. All you need is:

    1 1/2 lbs boneless pork loin chops
    1 (8 ounce) package cream cheese, softened
    1 (10 ounce) can cream of mushroom soup
    1 teaspoon minced garlic
    salt and pepper

  37. Loved the recipe til I got to 1/2 cup of honey! That stopped me in my tracks! As a diabetic, honey is just…as sweet as it is & I love it…but it’s a no -no! Do you have any listings that are diabetic friendly? Hope so.

    Thanks for yummy recipes. Check out Dreamfield”s pasta. Each serving is only 5 grams of digestible grams of carbs. Any other brand is 41 grams per servings. Dreamsfields is the only pasta I can eat! Ck it out! It’s a little higher in price but it makes having Italian food & lots of other foods made with pasta Available for me.

  39. Just cooked this for the first time and WOW! This recipe extremely easy and even more delicious. I substituted apple cider vinegar for the rice wine vinegar (couldn’t find any) as well as substituted all purpose flour (about 1.5x the amount listed) for the cornstarch. It turned out amazing! Thank you for this wonderful recipe.

    • Hmmm, not sure. My slow cooker just has low and high options. The internet tells me that low = 200 and high = 300, but I do not know that to be verified.

  44. I used this recipe and my husband loved it! The only thing I would change is to add more veggies for more of a stir-fry type meal to serve over rice to make it more substantial- so it can really be a one-pot dinner. The seasonings were spot on!

  45. We made this two weeks ago and it was absolutely fabulous! Flipping Easy peasy! We did change out the breast for thighs because that is what i had on hand. This recipe is definitely a keeper. i have also tweaked it for my other chinese dishes! So yummy! My son and I wished for lots more left overs.. it will be made at least twice a month!

    • Yes, that will work. They may just require slightly more cooking time if you cook on high heat, but keep an eye on them.
