Ever since I posted my hummus-crusted chicken recipe last month, I have been itching to try some more creative recipes with hummus.
So in honor of Thanksgiving, and my complete love of all things mashed potatoes, I decided to try an experiment this week — hummus mashed potatoes! Yep. Instead of adding in loads of sour cream or heavy cream or, really, any kind of cream to make these “creamy”, I just stirred in a little butter, salt, and a big batch of hummus. And believe it or not, it worked!!!
The key is definitely finding a hummus recipe that is full of flavor. I used one that was extra garlicky with a little hot pepper. But if you love roasted red pepper hummus, or wasabi hummus, or whatever your favorite flavor may be — go with that. Then mix it in with some mashed Yukon golds and a little salt and butter (or olive oil if you want to make these vegan), and literally, you’re good to go.
So easy, so flavorful, and these are probably even better for you than straight mashed potatoes. Can’t wait to serve these with my family this Thanksgiving!

Is it possible to fall in love with a food processor?
After spending a few weeks with this amazing Magimix 14-cup Food Processor by Robot-Coupe, I believe so. I’m pretty positive that we could spend the rest of our lives together. (And the 30 year warranty seems pretty confident that could be the case!) :)

So to put my own new Magimix to use, I decided to make a classic apple pie from scratch, using the food processor for every step. Now granted, people have been making apple pies since before the time of electricity. (Which – sidenote – it turns out that apple pie was actually the favorite dessert of Abraham Lincoln, who we’re talking about today on our Reads and Film sites in honor of the release of the film “Lincoln”!) But I have to tell you, even in the twenty-first century, having a great food processor sure makes cooking much quicker and easier. Oy.
A few weeks ago, I was adding in the thyme and oregano to my favorite homemade mozzarella sticks when it suddenly occurred to me — why are cheese sticks always made with Italian seasonings? Mexican food includes mozzarella all the time. Why not give this cheese stick recipe a try…Mexi-style?!?
Allow me to introduce you to one of my new favorites — Spinach Artichoke & Chicken Pizza! Actually, the chicken is optional, but the spinach and artichokes are a must. This one turned out to be fantastic!
