Sorry guys, couldn’t resist. After yesterday’s post on how to cook the perfect baked chicken breast, we’re continuing on the topic with a roundup of 15 delicious chicken breast recipes! According to the National Chicken Council (yes, there is in fact a national council for chicken), it’s currently estimated that the per capita consumption of chicken for this year is almost 90 pounds. And there’s been a steady incline of chicken consumption since the 60s, so next year, that number’s bound to go up again. Maybe it’s because chicken generally costs less than red meat, maybe it’s because it’s lean and healthier, or that it’s such a versatile and easy protein to prepare and eat. Quite possibly it’s a combination of all of those factors. Plus, it tastes good, and we just can’t seem to get enough!
At least, it sounds like Gimme Some Oven readers can’t get enough. As Ali mentioned yesterday, chicken recipes are the most requested topic on this blog by a landslide, but not just any kind of chicken. You want chicken breasts, so chicken breasts are what we’ve brought you. Well, chicken breast recipes at least. You still have to go out to the store and buy the chicken. We can’t do everything.

no apologies necessary…this post is perfection and i’m a chicken girl…so I will be making ALL OF THESE.
I fit exactly into this mode! I could actually eat chicken 5 times a week, no problem! Lately, due to a recipe from either here or somewhere else in the blogosphere, I’ve taken to pounding, then marinating the chicken breasts in buttermilk (sometimes laced with Siracha) for 6 hours to overnight! I even did that today before we cut them into cubes for kabobs. No more tough chicken! But I am going to try your method from yesterdays post, too!
