Happy Memorial Day Weekend!

I’m ready to dive headfirst into an ultra-relaxing, work-avoiding, party-hopping, sleep-in-ing, sun-soaking, watermelon-stuffing, pool-splashing, 3 day weekend of TIME OFF. So I’m going to keep things short and sweet, and let’s get it.

I spaced off making a red white and blue patriotic recipe in advance for Memorial Day this year. But this one’s heavy on the red, so hey, we’re at least a third of the way there. And with 5 ingredients, there’s zero excuse not to make a batch this weekend.

We’re talking strawberry salsa, baby!

I don’t know about where you live, but our strawberries have been lookin’ mighty fine at the grocery stores in Kansas City lately. And since the season doesn’t last long, I have been happily indulging. Strawberry banana smoothies for breakfast, strawberry kale salads for lunch, strawberry margs for happy hour, strawberry balsamic chicken for dinner, strawberry shortcakes for dessert…gimme some strawberries!!!

Of course, chips and salsa are also a course unto themselves in mi casa. So for a gathering with some neighbors the other night, I decided to whip up a simple strawberry salsa recipe to go with a salty batch of tortilla chips. I kept it simple with just 5 ingredients. And the result…?

Well, first off it felt like Christmas in May…

Description

This 5-Ingredient Strawberry Salsa is sweet, simple to make, and so delicious!


Ingredients

Scale
  • 1 pint strawberries, hulled and finely diced
  • 1 jalapeno, stem and seeds removed, finely diced
  • half of a small red onion, peeled and finely diced (about 1/2 cup)
  • 2/3 cup finely-chopped fresh cilantro, loosely-packed
  • juice of 1 lime, about 2 tablespoons
  • (pinch of salt and black pepper)

Instructions

  1. Toss all ingredients together until combined.  Season with extra salt and pepper, if needed.
  2. *If you would like a sweeter salsa, feel free to stir in a few teaspoons of warmed honey.

  1. Now, that’s interesting. I’m obsessed with strawberries. As you said the season is short so i eat them every single day but now is the first time i hear they can be combined with onion, cilantro and pepper. Definitely should try it. Sounds like a twist from everything i know till the moment. I eat them with bananas and yoghurt and lots of honey :) Sometimes i add apples and throw everything in the blender. I use them to bake cakes and for different toppings. Because of the sugar in them i sometimes i use them when i cook meat in the oven.Would love to see more recipes with strawberries here.

    • Yeah, I guess you could say I mostly enjoy them in sweet recipes, but I have fun mixing it up a bit, and playing around with sweet and savory flavors. Definitely give it a try! : ) Have a wonderful weekend as well!

  10. Here in Canada we don’t have Memorial Day, but I can still make this beautiful salsa recipe. I love strawberries and I think it is a great idea to add them in this salsa. I hope you have a great long weekend. Enjoy ;-)

  12. What an innovative recipe!  A great use of strawberries to be sure.  For some reason, I’m wanting to add crumbled bacon to it.  Actually, I pretty much want to add bacon to everything!  I wonder how it would turn out.  Maybe I’ll give it a try.

  17. Can’t do jalapeños – what would you recommend as a substitute?

    • Hey Becky, do you like other types of peppers? You could do some bell pepper or a more mild pepper. If you de-seed the jalapeños, and rinse them under cold water (and pat them dry), they shouldn’t really have any heat to them. I hope that helps!

  23. My daughter in law loves this recipe.  Is there a way it can be canned?  I’ve looked up other recipes for canning strawberry salsa, and they add sugar and vinegar … and cook it – which will altar the flavor, and the nutrition (sugar) …  

    I’d really appreciate any help I could get with this.

    • We’re glad to hear that Cheryl! We haven’t tried canning this ourselves, but we’re concerned because it isn’t cooked and doesn’t have vinegar, and because it has fresh cilantro, that this wouldn’t be ideal for canning.

  29. We have 3 strawberry patches and have an abundance of fruit this year. What I picked today became strawberry margaritas and then I used this recipe bit added a diced mango and doubled the onion and jalapeno. Oh, WOW! Will be doing this again… SOON.
